~ Ingredients ~

For the soaker: For the dry ingredients:


‡ 20gm Dried Cranberries ‡ 45gm Buckwheat Flour
‡ 30gm Dates,pitted ‡ 50gm Almond Flour
‡ 50gms Figs,dried ‡ 15gm Oat Flour
‡ 75ml Orange Juice,fresh ‡ 35gm Coconut Sugar
‡ Zest of 1 Orange ‡ ½ tsp Baking Powder
‡ ½ tsp Baking Soda
For the wet ingredients:
‡ ½ tsp Cinnamon Powder
‡ 1tbsp Flax Egg
‡ ¼ tsp Cardamom Powder
‡ 25ml Olive Oil
‡ ½ tsp Ginger Powder
‡ 40gm Apple,grated
‡ 1/8 tsp Cloves Powder
‡ Soaker
‡ A Pinch of Salt

For the mix to be added at the end: For the orange cashew cream:
‡ 30gm Almonds,chopped ‡ 30gm Cashews,soaked for 3hours
‡ 25gm Hazelnuts,chopped ‡ A Pinch of sea salt
‡ 25gm Walnuts,chopped ‡ ¼ tsp Orange Zest
‡ Plant Milk as required ‡ A Pinch of Cardamom
‡ 1tbsp Coconut Sugar
‡ 2 drops of Vanilla
‡ 3-4tbsp Plant Milk

~ Method ~
To make the soaker:
‡ Mix & soak everything. Keep aside for 24 hours

To make the cake:


‡ Preheat the oven.
‡ Mix and sieve all the dry ingredients.
‡ Add the grated apple to the soaker.
‡ Mix 1 & 2 and add the nuts.
‡ Bake in a 6 inch pan at 180C for 30mins.

To make the orange cashew cream:


‡ Blend all the ingredients to make creamy paste.

For the dry mix: For the wet ingredients:


‡ 50gm Oat Flour ‡ 1/4tsp Coconut Oil
‡ 50gm Almond Flour ‡ 35gm Coconut Sugar
‡ ½ tsp Baking Powder ‡ 10ml Liquid Jaggery
‡ ½ tsp Baking Soda ‡ 1-2drops Vanilla
‡ A Pinch of Salt ‡ 15ml Plant Milk
‡ ½ tsp Ground Ginger
‡ ¼ tsp Ground Cinnamon

~ Method ~

‡ Seive the dry ingredients.


‡ Mix all the wet ingredients.
‡ Mix 1 & 2.
‡ Portion into 4-5 parts.
‡ Bake in a preheated oven at 180C for 12-15mins.

For the cheese mix:


‡ 80gm Cashews,roasted
‡ 15gm Sweetener
‡ 30gm Figs,fresh
‡ 2 tbsp Almond Milk, more as required

For the base:


‡ 20gm Dates,pitted
‡ 20gm Hazelnuts,roasted

~ Method ~
For the cheese mix:
‡ Blend the cashews till paste-like.
‡ Add rest of the ingredients and make a thick mix.

For the Base:


‡ Blend both and make a base.
‡ Pour the cheese mix on the base and refrigerate for 6-8hour.

GARNISH:
‡ Fresh figs and hazelnuts

Almond Thumbprint

~ Ingredients ~
For the cookie dough:
‡ 112gm Almond Flour
‡ 15gm Coconut Oil
‡ 40gm Coconut Sugar
‡ A Pinch of Salt
‡ 1/8 tsp Baking Powder
‡ 1 Flax Egg
‡ 1/8 tsp Vanilla

For the strawberry jam:
‡ 50gms Strawberries
‡ 1tbsp Water
‡ 5gm Coconut Sugar

~ Method ~
For the Jam:
‡ Blend all the ingredients and cook on low till thick.
‡ Let it cool.

For the cookie dough:


‡ Mix all the dry ingredients and make a dough.
‡ Divide equally into 6-7 portions.
‡ Press it down lightly. The sides would crack which is ok.
‡ Press down the center and fill with the jam.
‡ Bake 12-14mins in a preheated oven at 180C.

For the dry mix:
‡ 2 Apples,diced with skin(approx 200gms)
‡ 55gm Brown Rice Flour
‡ 55gm Almond Flour
‡ 25gm Oat Flour
‡ ½ tsp Baking Powder
‡ ½ tsp Baking Soda
‡ ½ tsp Cinnamon Powder
‡ ½ tsp Ginger Powder
‡ 1/8 tsp Cloves Powder
‡ Pinch Nutmeg Powder
‡ A Pinch of Salt

For the Wet mix:
‡ 50gm Coconut Sugar
‡ 1 Flax Egg
‡ 40gm Apple Sauce
‡ 30ml Olive Oil
‡ 30ml Almond Milk or more if required

~ Method ~
‡ Toss the apples in cinnamon.
‡ Seive dry ingredients in a bowl.
‡ Mix wet ingredients well.
‡ Mix 1 & 2 and fold in ¾ of the apples.
‡ Top with the leftover apples.
‡ Bake at 180C for 30mins.
