Instructions
1. Cut one third from the top of each roll, and empty the bottom part.
2. Put roll bottoms on a baking sheet.
3. Take a bowl, mix sour cream, beans, lime juice, cilantro, salt, and
chipotle pepper sauce.
4. Place 1/4 cup of this mixture inside each roll. Place an egg on it.
5. Bake it at 400° for almost 10 minutes.
6. Spread cheese over the eggs. Brush roll with olive oil and put it on
the baking sheet.
7. Put toppings of avocado, bacon, salsa, and onions on each roll.
8. Replace the roll tops, and serve.
1 onion, chopped
1 1/2 tbsp. olive oil
1/3 tsp. chili flakes
2 tsp. cumin
1 tsp. paprika
450g kidney beans
1 large red capsicum, chopped
450g tomatoes, diced
4 eggs
1/2 cup water
1/3 cup coriander
1 avocado, sliced
Salt, to season
Pepper, to season
Lime wedges, Sour cream, and tortillas, to serve
Instructions
1. Preheat the oven to 180°C. Take a pan and heat oil over the medium
heat.
2. Put chili, onion, paprika, salt, cumin, and pepper, and cook for 5
minutes.
3. Add kidney beans, capsicum, water, and tomatoes in it.
4. After bringing it to boil, put the heat down, and cook for almost 10
minutes.
5. Put the mixture into four dishes. Fill them with each bean mixture,
and put the egg.
6. Bake for 15-16 minutes.
7. Serve with sour cream, coriander, lime, avocado, and tortillas.
Instructions
1. Preheat the oven to 350°. Mix milk, eggs, pepper, and salt.
2. Take a skillet, cook the egg mixture and stir it continuously over the
medium heat till the point it is thickened.
3. Cook sausage in the same skillet, and keep the heat medium, then
drain it.
4. Mix soup and sour cream together. Spread half mixture on a baking
dish. Make a layer with half of the tortilla slices, scrambled eggs, half
of the salsa, sausage. Then put the remaining sour cream mixture and
tortillas.
5. Pour remaining salsa and cheeses.
6. Bake for almost 30-35 minutes while keeping it uncovered.
7. Serve with green onions and enchilada sauce.
