HELP CENTRE Anzac Day Trading Hours – April 25


With Anzac Day approaching, restaurants are required to review their default public holiday trading hours by
Clicking Here. If any changes need to be made, a request must be sent to the Help Centre by April 17.
Please note - the default trading hours will be used for the Anzac Day public holiday.

If your restaurant is changing trading hours, please ensure your delivery partners are set up to
reflect those changes. You can do so by following the instructions below:
• UberEats: Enter holiday hours via the tablet or portal for any changes to hours of full-day closures.
• DoorDash: Enter holiday hours via the tablet or portal for any changes to hours of full-day closures.
• MenuLog: We will use the trading hours populated in the Public Holiday Trading Hours Template to
change your hours and closures.

FOOD SAFETY BrandM8 Changes


To assist restaurants in achieving 100% compliance, please review and print the chart in the attached file
for display. Times for the different checklists are clearly identified to allow you to set alarms on your device.
Please also take time to review the set up for delivery schedules, as Goods Receiving checks are now part of
your compliance score.The delivery schedule was initially set up for the update release on April 3, and
restaurants will only receive the ‘Good Receiving Temp Check’ on their delivery days.

There will be a first step/question – Are you receiving your scheduled delivery today?
• If no, it will exit the checklist, and compliance will be OK.
• If yes, it will continue with the delivery check.

In the event of a delivery schedule change Restaurant must ensure to update the delivery schedule via the
BrandM8 portal. Delivery Schedule Update Workflow: Restaurant Management > Restaurant
Configuration > Edit > Restaurant Options > BaiadaDelivery/PFD Delivery/MorcoFresh
Delivery/ParamalatDelivery.

SUPPLY CHAIN 390 ml Coca-Cola Regular & No Sugar – OOS NSW & QLD
As previously communicated, CCEP has informed us that a shortage of
Co2 will be affecting the stock quantities and availability of 390ml Coca-
Cola and Coca-Cola No sugar bottles in NSW. We have been informed
that QLD will now be affected as well. As a contingency, and until
April 17 IN NSW & QLD, CCEP will supply 375ml Cans at the same
price as 390ml for Coca-Cola and Coca-Cola No Sugar. Orders from
Tuesday, April 18, will be back to normal. We will let you know of any
further delays.

What does your restaurant need to do?:


• Place your normal EDI order through Crunch Time
• CCEP will review your order, and if the two 390ml PET SKU’s are out of stock CCEP will swap them with
375ml cans and credit the difference on the invoice to charge the same price as 390ml stock per case.

FOOD SAFETY EHO Visits – New Reporting Procedure
Restaurant inspections from Environmental Health Officers (EHO) from Local Councils conduct regular
premises inspections. EHO’s duties when visiting a food premises include investigation of complaints of food
poisoning, contamination of food (e.g. foreign object), or unhygienic food premises. Immediately report
ALL EHO visits by logging a ticket through the GYG Help Centre.

To do this, select ‘Get help from Restaurant Solutions’. Under Op’s Ticket Type select: Food Safety –
Food Safety Procedures – General. The Subject will be “Council Visit GYG (Your Restaurant Name)”
In the description, please advise when and why the EHO visited. If the visit was following a complaint, and
not a regular annual visit, please include details of the complaint at this point too. Upload all reports. The
Food Safety Team will contact you to acknowledge the visit and, if required, will provide support/guidance
with any actions or improvement notices issued.

Recently, we’ve seen a significant increase in Council visits to our GYG restaurants. During a visit, the EHO
will ask to see food safety records and documentation.

Please ensure all Managers & Shift Leaders are confident with accessing the following information: DFSC
past records, Food Safety Supervisor certificates, Pest Control Service Reports, GYG Food Safety Program,
VIVA platform. This updated procedure is documented on pg. 44-46 in the ‘Food Safety Procedures’ on VIVA
here.

SUPPLY CHAIN Premixed Chipotle Mayo Update


As communicated in Que Pasa previously, we have now transitioned all restaurants to the new pre-mixed
chipotle mayo (Excluding Townsville restaurants which will transition within the next 2 weeks).
Restaurants are now able to order the new chipotle mix from PFD as per the below code details:

The recipe in Crunch Time has now been adjusted to deplete the new product from April 11, allowing
restaurants to see an improvement to their COGS. Please contact the Help Centre if you have any questions.

SUPPLY CHAIN Avocado Update


All states are currently using Shepard Avocados, we expect the Shepard season to
last until the end of May when Hass season begins. Please ensure all crew stay
vigilant when prepping Guac and watch for 'Stings' in the Avocado flesh adjacent to
the skin. These are the fruit's natural defence from Insect damage, and the Avocado
reacts to injury caused by the insect by partitioning off the damaged part of the flesh,
resulting in hard, round 'stones' or 'stings'.

SUPPLY CHAIN Tomato Update
Morco has advised that the Roma availability and quality will improve over the week. We expect to no longer
have Gourmet Tomatoes substituted in our deliveries from the end of next week. Please note – The
cartons of mixed Gourmet and Roma Tomatoes will have a higher liquid content than our usual
Roma Variety. Please continue to inspect all Morco produce on delivery and raise a Zendesk ticket if there
are any issues. For all Morco Credit claims, please ensure you include a photo of the unusable stock AND a
photo of the Morco label from the carton. Please contact the Help Centre if you have any questions.

OP. EXCELLENCE Quesadilla Packaging – Reminder


This is a reminder that Quesadillas must now be served in a Mini Bowl. This change will benefit in the
following ways:
• Improves Presentation whilst reducing waste
• 1% COGs saving on Quesadillas

OP. EXCELLENCE Corn Peeler


As Communicated in the April Execution Guide, the new “Corn Peeler” will start going out to
all restaurants from Safco this week. The recipe guide and other relevant modules on Viva
GYG have now been updated and you can start using this tool once all your kitchen crew
have been trained on it. You can watch a video of the Corn Peeler in action HERE. The cost
of the corn peeler is $11.10 + GST + Freight & Shipping.

CAFE HOLA Coffee Training Reminder


Restaurants have three UCC training sessions for six crew members each. Cancel via the Help Centre two
