Infant cereals are an important energy source for the nutrition of infants in Mediterranean countries and form the basis
of their weaning feeding from the age of 3 to 4 months. Infant cereal certainly is the traditional choice of first food.
Infant cereals must be processed to improve their dispersibility in liquids and their digestibility, because the pancreas
of a 3 to 4 month old baby has a limited ability to digest starch.
