Jasmin’s Steak Stir Fry

Salad with Peanut Sauce

Serves: 4
INGREDIENTS :
o 1 napa cabbage, shredded
o ¼ purple cabbage, shredded
o 1 red bell pepper, diced
o 1 cucumber, diced
o 1lb. stir fry steak
o 1 brick of instant Chinese noodles
o ½ cup cashews
o Garnish with cilantro

INGREDIENTS :
o ¼ cup peanut butter (or whatever is leftover in the jar)
o 2 tbsp. soy sauce
o 1 ½ tbsp. rice vinegar
o 3 tbsp. lime juice
o 2 tbsp. maple syrup
o 1 tbsp. ginger, grated
o 2 tbsp. sriracha
o 2 tbsp. warm water

DIRECTIONS :
1. Cook stir fry steak until your desired doneness.
2. Break up the brick of noodles and cook until done. Drain.
3. Combine napa cabbage, purple cabbage, bell pepper, cucumber,
and cashews in a large bowl.
4. Using your peanut butter container, add the sauce ingredients and
shake until well combined.
5. Add the stir fry steak and noodles to the vegetables
6. Top with peanut sauce and cilantro.
