INTRODUCTION

First Gourmet Academy (FGA) recognizes food safety and sanitation as an essential part
of the food industry, and hence the inclusion of this in its diploma courses. While it is important
to be able to deliver food quickly, inviting and profitably, the importance of food safety and
sanitation cannot be undetermined. A valuable aspect of FGA's curriculum focuses on teaching
the aspiring chefs the value of food safety. The course starts with a lecture stressing the
importance of sanitation, characteristics and causes of food borne illnesses, and preventing
unsanitary conditions.

Further inculcating in them that they should be able to uphold, and at best, exceed
guidelines in providing a safe and sanitized kitchen which can be achieved through emphasizing
proper maintenance and cleaning intervals to ensure that not only are the surfaces kept sanitary,
but to make certain that no debris accumulate in crevices where bacteria can grow and spread.
Aside from this, students are also trained by the Philippine Red Cross to prepare them during
emergency situations should they arise in the kitchen. This zeros in on their responsiveness to
remote urgent crisis that needs to be resolved. The correct practice of food safety and sanitation
can greatly improve efficiency, keep productivity up, workers safe and consumer confidence
high, as well as meeting or surpassing standards and thus avoiding untoward incidents such as
having not only non-compliance fines or a potential shutdown.

Coffee tree drive was owned by Senyora Sushimita Morningstar, while the manager is
Maria Milicent Gabriel Santiago, Lpt . And the business started on November 2018, the named
Coffee Tree Drive was based on a particular street in Australia because the owner of the business
lives there, also, Coffee Tree Drive has received many rewards and certificates, the business also
sponsored some events like fiesta in Sta. Rosa, Sta. Rosa Got talent, Cultural Presentation, they
also managed food service in Wesleyan University, they once encountered a customer ranting
about her not fully cooked order. but the staffs gave the solution to the problem immediately.
Coffee Tree Drive has only one branch, which is located at Sumacab Este, Cabanatuan City. The
estimated profit monthly of the business is about two hundred eighty thousand pesos, the coffee
shop has seven staff. One baker, three cook with three coffee maker.
BACKGROUND

One of the business near in Nueva Ecija University of Science and Technology at
Sumacab Este, Cabanatuan City is Coffee Tree Drive that serves the good quality of foods,
drinks, dessert and services which every customers enjoy to come to their business. It was owned
by Senyora Sushinita Moringstar from Australia and manage by her sister, Mrs. Milicent
Gabriel- Santiago, Lpt. They build their business near in NEUST because they're very close to
NEUST and graduated in this Univerisity. They have the business permit for operating the
business, establish permit and sanitation permit from the municipality of Cabanatuan City and
from the Barangay. The monthly income of their business is about 280,000 pesos. They have 7
staffs, 1 baker, 3 cooks and 3 barista that wear the proper uniform for the safety of the employees
and the customers.

According to Mrs. Santiago, they maintain the cleanliness of their establishment because
its very important. Customers will not come to their coffee shop if the establishment or the
environment is dirty because of not following the rules in food safety regulation and the staffs
does not have proper hygiene. They make sure that before and after using all the utensils,
establishment was clean and sanitized, they used cleaning agent and thermal sanitation which is
the hot water for sanitation and sterilization. The staffs wear the proper uniform and have the
proper hygiene because they serve food for the customers.

They once encountered a customer ranting about her not fully cooked order because the
Coffee Tree Drive had the new hired cook that does not have a lot of experience for handling a
lot of orders. He cook the skinless chicken in hot temperature of oil in fry pan when he didn't use
a microwave to melt the iced surface in the chicken before deeping it fried, so the result is not
fully cooked but they gave a solution to the problem immediately for changing the order to a
new one and it din't happen again. Also, the location of their business was hidden in Sumacab
Este, Cabanatuan City because most of the students of NEUST didn't able to notice their coffee
shop if they are not renting a dorm, boarding, or apartment near in their shop
