CHAPTER 3

TECHNICAL STUDY

One of the major components of a project study is technical study. It gives the
overview on the proposal’s location, facilities, product, equipment needed, selling
process and operation. In this study the proponent identifies whether the product could
be produced at the highest possible quality level with the minimum cost. In this study
the proponent considered some factors such as the composition of the product such as
physical or mechanical properties should be described. Plant size that includes the
production capacity of the plant, the prices of equipment should be considered and also
the availability of products used, plant location, layout structure and utilities and lastly,
waste disposal. It includes specific utilities such as electricity and water.

A. THE PRODUCT(S)
The LUV YOU A LATTE café is a delicious product that helps increases
your fiber intake. It is loaded with antioxidants and beneficial nutrients that can
improve your health. The flavors off coffee is depends on the customers, but we
have different flavors like cappuccino, macchiato and etc.

The nutrients and benefits our product can provide are the following:
Coffee Bean (Caffeine)
 Coffee is a brewed drink prepared from roasted coffee beans, which are
the seeds of berries from the Coffee plant. The genus Coffee is native to
tropical Africa and Madagascar, the Comoros, Mauritius and Reunion in
the Indian Ocean. Coffee May Protect You From Alzheimer’s Disease and
Dementia. Coffee Can Help You Burn Fat. The Caffeine can drastically
improve physical performance. Coffee May Lower your Risk of Type II
Diabetes. Caffeine may Lower the Risk of Parkinson’s disease is the
second most common neurodegenerative disease, right after Alzheimer’s.
Coffee appears to have protective effects on the liver. Coffee can fight
depression and make you happier. Coffee drinkers have a lower risk of
some types of cancer like liver cancer. Coffee does not cause heart
disease and may lower the risk of stroke. Coffee may help you live longer.
Coffee is the biggest source of Antioxidants.

Whipped Cream

 Whipped cream is cream that is whipped by a whisk or mixer until it is


light and fluffy. Whipped cream is often sweetened and sometimes
flavored with vanilla. Whipped cream is often called Chantilly cream or
crème Chantilly.
 It has Vitamin A, Calcium, Vitamin D, Vitamin B-12 and Magnesium.

Sugar

 Sugar has calorie content that will give your body energy that you lack.
However, all that energy is short lived and it can only give your short
bust of increased productivity. Because sugar contains four calories per
gram, but it lacks nutritious value (no dietary fiber) and because of that
sugar is only an added ingredient in many meal.
 Sugar’s glycolic acid can be very helpful in maintaining the health and
look of your skin. Using it can help elimination blemishes and restoring
the balance in the skin’s oils.
Espresso, Macchiato, Americano, Latte and Cappuccino coffee powder

 These are the types of coffee powders that will mix into the plain
coffee.
 These coffee powders will mix to the plain coffee according to the
customers that they want to select.

Honey

 Honey is a sweet, viscous food substance produced by bees and


some related insects.
 Bees produce honey from the sugary secretions of plants or
other insects through regurgitation and enzymatic activity.
 Honey has 304 calories and energy source. It is a source of vitamins
and minerals.
 Honey can lose weight and improve your athletic performance. It is
antibacterial and antifungal properties.

Vanilla

 Vanilla is a flavoring derived from orchids of the genus Vanilla,


primarily from the Mexican species, flat-leaved vanilla.
 The word vanilla is derived from “vainilla” the diminutive of the
Spanish word “vaina” (vaina itself meaning,” shealth” or “pod”)

Chocolate

Advantages of eating chocolate

 Chocolate won’t make us fat and it has 210 calories


 It can strengthen the protection of teeth and lower cholesterol

Disadvantages of eating chocolate

 It is an element that addictive and can give you migraine problem,


vasoactive amines and headaches.
 It can dilate the brain and vessels.

Marshmallow

 Marshmallow is a great plant as all its parts can be used to treat


different kinds of ailments of the human body.
 Marshmallow is a tree that has many applications in medicine. The
root and the leaves are used to treat swelling in the respiratory
system as they work efficiently on the membrane that lines the
trachea and also for stomach ailments. It is used even in treating
bladder stones in some cases. These can also be used to cure and
treat simpler problems like dry cough.
 Marshmallow is a sweetener since ancient times and it has about
0.12 grams fat if one consumes about 100 grams of them and almost
no cholesterol. It offers decent qualities of sodium and potassium,
both important for proper blood pressure. It is also a good source of
carbohydrates, which are about 81 grams per 200 grams. They are
also sources of limited amount of protein and iron.
 Marshmallow has 50g amount per 1 cup of miniature ad has 159
calories. It has 40 mg sodium, 3 mg potassium and has a total
carbohydrate of 41g. It has a 0.1g dietary fiber, 29g of sugar and
0.9g of protein.

Graham crackers

 Graham crackers as known today first began as graham bread in


1800’s. Modern graham crackers such as those made by Nabisco,
typically contain unbleached whole-grain or graham flour that the
manufacturer enriches with vitamins. In addition to flour, graham
crackers contain oils and sweetness.
 Graham crackers generally come in long, rectangular shapes. One
large rectangle contains only 59 calories which is less than a large
chocolate chip or sugar cookie. Graham cracker contains small
amount of pantothenic acid, vitamin B-6, riboflavin, thiamin, niacin
and contain no vitamin C, A or B-12.
 Graham crackers are sweet but they do not taste like cookies.

Stick-O

 Stick-O have different flavors, it can be chocolate, ube, pandan,


strawberries, melon, cookies & cream and etc.
 Stick-O is a stick that can be partner with different food like in ice-
cream and etc.

Sprinkles

 Sprinkles or sugar strands are very small pieces of confectionery


used as a devoration or to add texture to desserts such as cupcakes,
dough nuts or ice-cream. The tiny candies are produced in a variety
of colors and are generally used as a toppings or a decorative
element.

Cake

 Cake is a form of sweet dessert that is typically baked. In its oldest


forms, cakes were modifications of breads but cakes now cover a
wide range of preparations that can be simple or elaborate and that
share features with other desserts such as, pastries, meringues,
custards and pies.
 Cake is usually form of flour, salt, sugar, eggs, butter or oil. Cake is
often served as a celebratory dish on ceremonial occasions, such as
weddings, anniversaries and birthdays.
B. MANUFACTURING PROCESS
The manufacturing process involves the step by step process in
making the coffee and the whipped cream that serves to the customers.
This comprises the preparation of the ingredients and equipment mixing
the elements to arrive at a perfect and cute mixture of the coffee.
I. PRE-PRODUCTION PHASE
a.) PURCHASE OF RAW MATERIALS
Sugar, whipping cream, honey, vanilla, chocolate (kisses),
marshmallow (small), graham crackers (crushed), stick-o and sprinkles
were purchased from SM Baguio City.
Chocolate, Ube and Caramel Cakes are purchased by Goldilocks
Company.
Coffee bean powder, Latte, Macchiato, Espresso, Americano and
Cappuccino powder were purchased by Nescafe Company.
b.) RECEPTION OF RAW MATERIALS
Reception of the raw materials purchased is done during morning
after the day we bought those raw materials. During the reception stage,
the raw materials are unloaded in the company’s premises.
c.) GENERAL PREPARATION
This is the initial phase that has to be done. It involves the
preparation of the raw materials, the necessary equipment’s to use and
the place of production. Maintenance of the sanitation and cleanliness of
the utensils and manufacturing equipment is a must. Work environment
should be organized before proceeding to the main production process.
II. MAIN PRODUCTION

WHIPPED CREAM

INGREDIENTS:

 1 cup cold heavy whipping cream


 2 tablespoons of honey
 ½ teaspoon vanilla

DIRECTIONS:

1. Place the mixer bowl and whisk in freezer for at least 20 minutes to
chill.
2. Pour heavy whipping cream, honey and vanilla into the cold bowl and
whisk on high speed until medium to stiff peaks form, about 1 minute.
3. Do not over beat.
4. Put the whipped cream in the whipped cream dispenser.

COFFEE (LATTE, ESPRESSO, MACCIATO, CAPPUCINO and AMERICANO)

INGREDIENTS:

 Coffee bean powder


 Latte, Espresso, Macchiato, Cappuccino and Americano powder
(it depends on the customers flavor of coffee they like)
 1 small size of measuring spoon of sugar
 Whipped cream (in a whipped cream dispenser)
 Toppings (chocolate kisses (small pieces), marshmallow
(small pieces), sprinkles, stick-o (small) and crushed graham.
(it depends on the customer’s choice for their toppings to their
coffee’s)
DIRECTIONS:

1. Get a cup of coffee and press the choice coffee of the customers
they like in the coffee machine.
2. Put a 1 small size of measuring spoon of sugar to the coffee.
3. Press the whipped cream dispenser to get the whipped cream into
the coffee.
4. Put a toppings (that required the choices of the customers)

C.) PLANT SIZE PRODUCTION, RAW MATERIALS SCHEDULE AND COST FOR 1
YEAR

PLANT SIZE:

Our plant is located at Rosario La, Union. It has an area

of 21 square meter which has a total cost of 1,000,000.00.


Equipment’s to be used in the production are not too big as to crowd them the
machineries are proportionately arranged to fully utilize the space.
