According to the assigned video, I


watched A brief history of cheese on last Saturday.

This video is about cheese, who invented cheese back before 10,000 years ago, how people in the past
stores cheese, what happened with cheese along multiple timelines and the history of how modern
popular cheese was created.

Within the entire video, I have chosen 3 details that I would like to share.

One detail discussed in this video is about the accidental creation of whey. It is a chemical process after
leaving fresh milk out in a warm area for a few hours and starting to get sour. It will eventually form soft
clumps on top of the milk and underneath are the Whey. These clumps on top are the building blocks of
cheese, which would be aged, pressed, ripened, and whizzed into dairy delights, like butter, ice cream,
or yogurt.

The second detail discussed is that in many different cultures, some don’t like cheese, and some
embrace it. And they added their local flavors. For example, Egyptians enjoyed goats’ milk cottage
cheese, straining the whey with reed mats. In South Asia, they mixed milk with lemon juice, vinegar, or
yogurt to produce soft mild cheese which could be added to curries and sauces.

A final detail from this video is that after the western roman empire collapsed, there were hundreds of
Benedictine monasteries scattered across Europe, medieval monks did endless experiments with
different types of milk, cheesemaking practices, and aging processes. Finally, it just became today’s
popular cheeses like Parmesan, Roquefort, Munster, and several Swiss types were all invented by them.

Here are three words I took from the video: Straining, Monasteries, Medieval

Straining is describing 2 items that were tightened together (like sandwiches)

Monasteries are saying that in a place, a house, for example, is full of people under religious vows.

Medieval is describing someone in the Middle Ages (Somewhere around 1500 to 1000 years ago)

In my opinion, this video was normal to understand because I watched this video more than 5 times. It is
okay in the first half to understand as they are just the history of how cheese was discovered. But with
the second half when it starts discussing religions and other countries' beliefs. This just starts to make it
complicated to understand. However, with this video, I learned that milk and cheese are the same in
many ways. They have the same proteins, fats, and minerals but cheese doesn’t have as much lactose as
milk and this tells me that cheese is better for our stomachs.
