The Filipino cuisine we know today has been impacted by foreign occupations in the Philippines for

thousands of years. Even though the food constantly changes, each dish still reflects traditional Filipino
culture and cooking, some of which even have a sense of peaceful resistance.

The history of the Philippines shows how wars, political events, and cultural mingling continue to
influence Filipino cooking and flavors. However, since the beginning of the 21st Century, some of the
native Filipino Cuisines such as foods made from earth’s bounty of malagkit, cassava, ube, gatas ng
kalabaw, kamote, saging na saba, langka, and dayap that thrive to remain breathing even after different
wars and national conflicts have been slowly dying, this is because of the growing popularity of foreign
influence on foods whom Filipino gained liking to and even completely changed their palates favoring
foreign cuisines.

With a zeal for reintroducing local and traditional dishes for the younger generation and since removing
the foreign influence in their mind is a nigh-impossible job as well as with the fact that this venture is
still a business that expects profit, the company has developed a way of fusing these two factors, the
traditional Filipino food and the growing influence of foreign cuisine in a local setting.
