In response to the California Voting Rights Act (CVRA), the Belmont-

Rustic Potato Leek Soup

• 1 cup heavy cream (adjust to taste)
Method
1. Heat butter and 1 tablespoon olive oil in a soup pot over medium
heat.
2. Add onion and leek. Sauté until the onion is translucent, 6-8
minutes.
3. Add the garlic and thyme, cook for 1 minute.
4. Add potatoes, salt and pepper.
5. Pour in vegetable stock and bring to a boil. Cook for about 10
minutes.
6. Then, simmer for approximately 10-12 minutes, or until potatoes
are very tender. Cover with lid.
7. Use an immersion blender to pulse some (or all) of the mixture
unless you prefer a chunky soup.
8. Add cream and after 1 minute, turn off heat.
9. Taste + adjust salt and pepper and stir.
10. Ladle the soup into bowls and drizzle with *EVOO, if desired.
11. Serve with crusty bread or enjoy solo.
