Standard Basic Information of Initial Bread Plant Start-Up, It’s best of our knowledge
1) Bakery Machinery : Minimum 4 Machine Required
a. Flour Shifter ( Optional ) : To sieve flour
b. Spiral Mixer 80Kg or High Speed Mixer : To mix flour, water, ghee, preservatives,
improvers and yeast (for fermentation process)
c. Dough Divider ( Optional ): To Divide Dough
d. DoughMoulder:ToMouldDoughinShapeinthetypeofBread10incheslongandthen
to place in the Mould
e. Proover (Optional): For Quick Fermentation Process
f. Rotary Rack Oven 44Tray Diesel Operated : To Bake Processed Dough at 230 C
Temperature
g. Bread Slicer : To Slice Bread
h. Accessories : Table, Trolley, Tray, Mould and Working Table
When business prosperous you need additional addition in the infrastructure 3000 Sq Feet Place
with One Oven, Proover, Shifter, Cooling Tunnel, High Speed Slicer, PackingMachine.
Generator is Compulsory.
First Aid and Fire Safety should always been concerned.
Food Safety standards should be followed.
Lab is essential in Bread Factory.

feeling to the Working Staff.
4) Electricity Required : 15-18 hp/12-15kw, 3 Phase
5) Person Required : Approx. 7 persons
6) Per Day Bread Production: 800 Kg Flour / 2000 Loaves.
7) Capacity of Plant : 150 Kg per Hour/ 292 Loaves of Bread per hour
8) Standard Cost
a. Landing Cost of Bread : 12 to 14 Rs per 400 Gms Bread Loaf
b. Selling Cost of Bread ( Dealer) : 20 Rs per 400 Gms Bread Loaf

9) Approximately Working Capital Required for a Week: 1,20,000/- in working capital

10) Packaging: Good Quality Packaging Bag necessary and Long Table
11) Bread Self Life: 3 days
12) General Principle to make Good Bread:
a. After Baking the Bread has to keep for 4 hours to cool down to bring the Room
Temperature or can be kept under heavy Industrial Fan and then it should be sliced.
b. 500 Bread Loaves should be kept unsliced. Must be sliced according to requirement
because if the Bread is unsliced it has no chances to stale.

Point to Consider:
Altogether Minimum investment is 15 Lacs but One Oven needs to be purchased after 3 months of
Commercial Production start. The Plant operating at Full Capacity, the Production will be 2500-5000
Bread Loaves. Where Collection at the rate of Rs 20 per Bread Loaves (Dealer) will be Rs 1, 20,000/-.
This Plant can produce goods of Rs.1, 20,000/- per Day

Important Points to note:


1) Water Inlet and Used Water Discharged
2) Garbage Removed Everyday or Burnt everyday
3) Freeze needed to put Yeast
4) Money saved is money earned so always try to train your staff to minimize waste
5) You will not gain the weight of water in the finish product, as the moisture is dried up.
