9:00- 9:15 - Wash hands, gather all ingredients, wash them, measure and gather
equipment needed, preheat oven to 390F, chop chives, clean and wash fish and season
well with salt and pepper for Baked Lemon Fish Steaks. Wash up.

9:15 - 9:45 - Place fish into baking tray, coat with Lemon Butter sauce and place into the
oven to bake. For Baked Sweet Potato Balls, peel and cube sweet potatoes and steam
for 10 mins untill soft, mash potatoes, add rice flour and baking powder and form balls.
Place balls on greased baking tray and bake in oven at 390F for 20 mins

9:45 - 10:15 - Prepare Stir Fry sauce, slice carrots, bell peppers and mushrooms, chop
broccoli into small pieces, mince garlic and measure 1 cup of baby corn for Veggie Stir
Fry. Cook in a pan at a high heat in vegetable oil for 8 mins, add sauce to the veggies
and stir then let simmer for 4 mins. Start Preparing Batter for Light Fruit Cake

10:15 - 10:45- Preheat oven to 300F, mix dry ingredients first then incorporate eggs and
other ingredients into the batter overtime. Add fruit puree and scoop mixture into a
greased cake pan. Place into oven and bake for 1 hour or until a toothpick comes out
clean.

10:45 - 11:15 - Prepare Salad Dressing for Christmas Salad. Wash and dry salad
greens and other veggies, chop veggies to desired size and add ingredients into a
large bowl and toss together for a well mixed salad. Add dressing to salad and toss
salad again to distribute the dressing evenly

11:15 - 11:30- Plating and Serving, Place Lemon Baked Fish Steaks, Baked Sweet
Potato Balls and Veggie Stir Fry onto oval plates and garnish with chopped chives,
place Light Fruit Cake on a glass cake stand equipped with a doilly, add salad into a
salad bowl and present for examiner. Clean workstation.
