The story goes that the chef
Josef Tüdös was ordered to
create a bread that simulated
the tip of the Citlaltépetl
volcano (better known as the
Pico de Orizaba) and that is
why, since its conception and
thinking in this way, the texture
and volume of the pambazo
forms a kind of high-rise
sandwich.
