CONDENSED MILK BREAD

Ingredients

Tangzhong
● 3 tbsp. Bread Flour (Pro Tip: Use Japanese Bread Flour)
● ½ cup of Water or Milk

Dough
● ½ cup Milk
● ¼ cup or 75g condensed milk
● 1 pc Egg
● 1 tsp salt
● 3 ½ tbsp or 42 grams of White Sugar
● 4 cups minus 3 tbsp All Purpose Flour or Bread Flour (preferably
Japanese Bread Flour)
● 2 ¼ tsp. Saf-Instant Blue Yeast
● ¼ cup softened butter

Egg Wash
● 1 pc egg
● 1 tbsp milk

Condensed Milk Glaze


● 4 tbsp softened butter
● 4 tbsp condensed milk

Procedure:
1. To make the Tangzhong, combine together bread flour and water/milk in a small
pan or pot. Cook over medium heat, continuously whisking until smooth and
thick. Set aside.
2. For the dough, combine the tangzhong and all other dough ingredients except
bread flour, Saf-Instant Blue Yeast, and ¼ cup softened butter in a large
bowl (can be directly your stand mixer bowl). Add the flour and top with the yeast.
The goal here is to not have the yeast directly touch the salt.
3. Either manually or with an electric stand mixer, mix all the ingredients together
until they all come together. Add ¼ cup softened butter and continue to knead
the dough until it passes the windowpane test or when you can stretch the dough
thinly without it breaking immediately.
4. Take the dough out and form into a ball. Oil the surfaces of the same mixing bowl
and put the dough back in. Cover with plastic wrap or a damp towel until the
dough doubles in size. This may take 30-60 minutes depending on the
temperature of your room.
5. Once proofed, take the dough out and cut into your desired shape. Put into pans
lined with parchment paper and cover once again with plastic wrap or a damp
towel to proof for another 30 minutes.
6. Make the egg wash by whisking together 1 egg and a splash of milk. Brush the
dough with this egg wash mixture. Try your best to make sure all the top surface
of the dough gets brushed - it will look really pretty later!
7. Bake the dough for 20-22 minutes in an oven preheated to 350°F.
8. While the dough is baking, make the condensed milk glaze by combining
together softened butter, condensed milk, and (optionally) lemon zest until
smooth.
9. When the bread is done baking, take them out of their pans and brush with the
glaze. Optionally, top with more lemon zest. Leave the bread on the rack to cool
and enjoy!
