Pierogi, originating in Poland during the Middle Ages, are
iconic dumplings known for their versatility and comfort.
Today, pierogi remain a cherished part of Polish cuisine,
loved for their adaptability to various fillings and their role
in family gatherings and celebrations, symbolizing tradition
and culinary warmth worldwide.

I N G R E D I E N T S
2 CUPS ALL-PURPOSE FLOUR
1 LARGE EGG
1/2 CUP SOUR CREAM
1/4 CUP BUTTER, SOFTENED
1/2 TEASPOON SALT
2 CUPS MASHED POTATOES
1 CUP SHREDDED CHEESE (CHEDDAR OR FARMER'S CHEESE)
SALT AND PEPPER TO TASTE

I N S T R U C T I O N S
1. PREPARE THE DOUGH:
2. IN A MIXING BOWL, COMBINE THE FLOUR AND SALT. ADD THE
EGG, SOUR CREAM, AND SOFTENED BUTTER. MIX UNTIL A
DOUGH FORMS.
3. KNEAD THE DOUGH ON A FLOURED SURFACE UNTIL IT
BECOMES SMOOTH. COVER IT WITH A DAMP CLOTH AND LET
IT REST FOR 30 MINUTES.
4. PREPARE THE FILLING:
5. MIX TOGETHER THE MASHED POTATOES AND SHREDDED
CHEESE. SEASON WITH SALT AND PEPPER TO TASTE.
6. ASSEMBLE THE PIEROGI:
7. ROLL OUT THE DOUGH ON A FLOURED SURFACE UNTIL IT'S
ABOUT 1/8 INCH THICK. USE A ROUND CUTTER (3-INCH
DIAMETER) TO CUT CIRCLES IN THE DOUGH.
8. PLACE A SMALL AMOUNT OF FILLING (ABOUT 1 TEASPOON)
ONTO EACH DOUGH CIRCLE.
9. FOLD THE DOUGH OVER THE FILLING, CREATING A SEMI-
CIRCLE, AND PRESS THE EDGES FIRMLY TO SEAL.

Lasagna
T O R T I L L A D E
P A T A T A
Ingredients:
2 lbs waxy potatoes such as Yukon Gold or red
Salt to taste
8 large eggs at room temperature
1 large white onion
Extra virgin olive oil for frying
Instructions
1. Peel the potatoes and rinse them under cold water. Slice them
thinly (about 5 mm thick) using a sharp knife or mandoline.
2. Pat the potato slices dry with paper towels and put them into a
large bowl, then sprinkle with salt and mix well.
3. Heat a ½ inch of high quality extra virgin olive oil in a large
frying pan over medium low heat. When the oil is hot, add the
potatoes and add more oil if necessary until all are covered.
4. Cook the potatoes on low heat for 20 minutes. They may break
down a little; this is okay.
5. While the potatoes are cooking, beat the eggs in a large bowl
and season with some salt.
6. Slice the onion as very thinly, and fry it in oil over medium heat
in a separate pan until it begins to caramelize, about 10-20
minutes. Add a splash of water now and then to deglaze and
prevent burning. Drain off any excess oil and add to the egg
mixture.
7. Once the potatoes have fried for 20 minutes, remove them with
a skimmer or spider into a colander and allow them to cool and
drain for at least 5 minutes.
8. Once the potatoes have cooled, add the potatoes and onions to
the egg mixture and stir well. Let the egg mixture sit for about
15-20 minutes.
9. Pour out the frying oil from the potatoes and save it for another
use. Place the pan over medium-low heat and pour in the egg
mixture.

the heat is low enough or the tortilla will cook too quickly and
be rubbery. You can run a rubber spatula along the edges to
make sure the tortilla isn't sticking.

flip quickly. Some uncooked egg mixture will likely slip out, but
that's okay. Slide the tortilla back into the pan to cook the other
side, and cook for another 6-8 minutes.

Ingredients
Ingredients for 4 people:
250 g of chickpeas,
300 g of beef black pudding,
¼ of chicken,
100 g of streaky bacon,
100 g of black pudding with onion,
100 g of spicy sausage,
50 g of cured ham end,
4 marrow bones around 5 cm,
long 1 kg of cabbage,
4 medium potatoes,
2 carrots,
1 onion,
1 turnip,
1 clove of garlic,
olive oil for browning,
100 g of stick noodles for the soup
Salt.
For the mix: 2 eggs, 75 g of breadcrumbs 2 cloves of garlic, 2 tsp of finely-
chopped parsley, olive oil, salt.
Preparation
1. Soak the chickpeas overnight in warm water with a little salt.
2. Next day, remove and drain them. Place the meat, bacon, washed bones and
the ham in a wide-based earthenware dish, and cover with around 4 litres of
water.
3. Put the dish on the flame and when it comes to the boil, any scum will rise
to the surface.
4. Remove it with a spoon for skimming and add the chickpeas. When it
reaches boiling point again, add the carrot, onion and the turnip.
5. Cook on a low flame for three hours or more, until the chickpeas are tender.
6. Twenty minutes before the end, add the peeled and halved potatoes.Add
salt to taste.
7. At the same time, cook the finely chopped cabbage in another pot for half
an hour.
8. Drain and gently fry it with the garlic.
9. Cook the spicy sausage and the black pudding in a separate pan so that they
do not stain the broth.

of squashed croquette shapes and fry them in plenty of very hot oil.

Ingredients:
2 cups cooked and cooled jasmine rice (day-old rice works best)
1 cup cooked chicken breast, diced
1 cup mixed vegetables (peas, carrots, corn, and/or chopped bell
peppers)
2 eggs, lightly beaten
3 green onions, finely chopped
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
Salt and pepper to taste
Instructions:
1. Preparation:
Ensure that your cooked rice is cooled and separated to
prevent clumping.
2. Cooking Chicken:
In a large skillet or wok, heat 1 tablespoon of vegetable oil
over medium-high heat.
Add diced chicken and cook until browned and fully cooked.
Remove chicken from the pan and set it aside.
3. Vegetable and Egg Cooking:
In the same pan, add another tablespoon of oil.
Add the mixed vegetables and sauté until they are tender but
still crisp.
Push the vegetables to the side of the pan and pour the
beaten eggs into the empty space. Scramble the eggs until
fully cooked.
4. Combining Ingredients:
Add the cooked rice to the pan, breaking up any clumps.
Pour soy sauce, oyster sauce, and sesame oil over the rice.
Mix everything well to ensure the sauce coats all the
ingredients.
5. Adding Chicken:
Add the cooked chicken back into the pan, stirring to combine
with the rice and vegetables.
6. Seasoning and Finishing:
Season with salt and pepper to taste. Be cautious with salt as
the soy sauce already adds saltiness.
Stir in chopped green onions and continue to cook for an
additional 1-2 minutes until everything is heated through.
