Introduction

A warm loaf of freshly baked sourdough bread is hard to resist.


Patientlymade, loving kneaded and shaped to produce that golden brown
loaf is a testament to craft behind this gastronomic staple. Sourdough loaves
are known for ageing gracefully—keeping well in storage, versatile in terms
of use and can be creativiely recreated to suit various palates and
occassions.

Among other bread variants, sourdough is said to be the most nutritious.


Not only is it easily digestible, but the basic ingredients that make up a loaf
offer vitamins and minerals work to slow down the rate that glucose is
released into the blood stream. This results in a lower glycemic index and
makes the gluten in flour easier to digest, which results in lowering
intolerance.

Sourdough Bread Recipes


Sourdough Cracked Wheat Loaf

Prep time: 210 minutes


Servings: 6

Ingredients:

3/4 cup cracked wheat


1 cup hot water
1/4 cup margarine, melted
2 tablespoons molasses
2 tablespoons honey
3/4 cup nonfat milk
1/2 cup flax seed
1/2 cup raw sunflower seeds
2 1/2 cups sourdough starter
2 cups whole wheat flour
3 1/2 cups bread flour
1 egg, beaten

Directions:

1. Pour hot water over cracked wheat. Add molasses, milk, flax
seed, margarine and sunflower seeds. Mix thoroughly.
2. Allow to cool and add sourdough starter.
3. Slowly add in the flours. Once mixture is stiff, knead onto a
floured surface for about 10-15 minutes.
4. Shape into a ball and cover for an hour and a half.
5. Punch down and set aside for another hour.
6. Once ready, divide and knead into two loaves.
7. Brush with egg and bake for half an hour.
Homemade Tomato Sourdough Loaf

Prep time: 210 minutes


Servings: 6-8

Ingredients:

1 1/2 cups sourdough starter


1 cup warm water
1 pack active dry yeast
1 cup warm tomato juice
2 teaspoons white sugar
1 teaspoon salt
7 cups all-purpose flour

Directions:

1. Dissolve yeast in water.


2. Combine starter and tomato juice and add yeast, sugar and
salt.
3. Add flour a cup at a time and continue mixing.
4. Once mixture is stiff, knead mixture onto a floured surface.
5. Place in a bowl and cover. Set aside for two hours and allow
mixture to rise.
6. Punch down and divide into two loaves.
7. Allow to rise for another half hour.
8. Once ready, bake for 45-60 minutes.

Sourdough Coffee Loaf

Prep time: 120 minutes


Servings: 6

Ingredients:

3 cups whole wheat flour


1 pack fast rising yeast
1 1/2 cups sourdough starter
1/4 cup honey
1 tablespoon butter, softened
1 teaspoon salt
1 cup warm water
1 teaspoon instant coffee granules
1 teaspoon cocoa powder

Directions:

1. Mix butter, sourdough starter, water, instant coffee, salt, honey


and cocoa powder together.
2. Slowly add 3 cups of flour, half a cup at a time. Mix using your
hands.
3. Knead and add 1/2 cup of flour until dough is smooth.
4. Place dough in a bowl and cover with plastic wrap and a damp
tower. Allow mixture to rise for about an hour.
5. Once ready, flatten dough and press all air out. Shape into a loaf
and place on top of a baking sheet lined with parchment paper.
Drape with a towel and allow to rise for another half an hour.
6. Once ready, bake for 20-30 minutes at 400 degrees.
Cheesy Sourdough Bread

Prep time: 40 minutes


Servings: 4-6

Ingredients:

1 loaf sourdough bread


1 cup butter
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 tablespoon poppy seeds
1 tablespoon seasoned salt
1 tablespoon minced onion
1 pound Swiss cheese, sliced

Directions:

1. Set oven to 350 degrees.


2. Over low heat, melt butter with lemon juice, mustard, seeds and
salt. Add onions and stir until tender.
3. Slice the tops of the bread diagonally. Make sure that you do not
slice all the way through.
4. Pour mixture over bread.
5. Take sliced cheese and place in between the slices.
6. Bake for about half an hour in the oven.

Mini Sourdough Loaves

Prep time: Overnight


Servings: 4-8

Ingredients:

1 cup sourdough starter


1 1/2 cups warm water
1 1/2 teaspoons salt
1/2 cup white sugar
1/2 cup corn oil
6 cups bread flour

Directions:

1. Combine water with sugar, salt and corn oil and sourdough
starter.
2. Add flour into the mixture and knead.
3. Place in a greased bowl, cover and let it rise overnight.
4. Once ready, knead for about 10 minutes and divide into two
loaves. Set aside and allow to rise for about half an hour.
5. Bake at 350 degrees for around 45 minutes.
Easy Bake Sourdough Bread

Prep time: 50 minutes


Servings: 8-10

Ingredients:

1 cup water
1 cup bread flour
1/4 teaspoon white sugar
2 teaspoons active dry yeast
1 1/2 cup sourdough starter
7 tablespoons milk
1 teaspoon vinegar
1 tablespoon vegetable oil
1/2 teaspoon salt
1 teaspoon white sugar
3 cups bread flour
2 teaspoons active dry yeast

Directions:

1. Combine water, flour, sugar and yeast in a bowl.


2. Place in a greased bowl and cover; let it sit overnight.
3. Once ready, pour mixture into a bread machine and add
remaining ingredients.
4. Select cycle and press start.
Stuffed Sourdough Loaf

Prep time: 30 minutes


Servings: 8-10

Ingredients:

1 loaf sourdough bread


1/2 cup butter
6 cloves garlic, chopped
1 pound Monterey Jack cheese, cubed
1 pack cream cheese, softened
1 cup grated Parmesan cheese
2 (10 ounce) cans artichoke hearts in water, drained
1 cup shredded Cheddar cheese

Directions:

1. Cut the top part of the sourdough loaf and scoop out bread to
make a bread bowl.
2. In a sauce pan, take scooped bread pieces, butter and garlic until
bread is lightly toasted.
3. In a bowl, combine toasted bread pieces with remaining
ingredients. Pour mixture into the bread bowl and cover.
4. Place in the oven and broil for 5-10 minutes.
Baked Sourdough Croutons

Prep time: 30 minutes


Servings: 6-10

Ingredients:

1/3 cup butter, melted


1 1/2 teaspoons Italian seasoning
1/4 teaspoon extra-virgin olive oil
1/4 teaspoon kosher salt
6 slices sourdough bread, cut into 1/2-inch cubes
2 teaspoons grated Parmesan cheese

Directions:

1. Set oven to 300 degrees.


2. Saute bread pieces with all remaining ingredients and toss well.
3. Arrange on a baking sheet and bake fro about 20 mintues.
Honey Sourdough Loaf

Prep time: 120 minutes


Servings: 4-6

Ingredients:

2/3 cup liquid sourdough starter


1/2 cup water
1 tablespoon vegetable oil
2 tablespoons honey
1/2 teaspoon salt
1/2 cup high protein wheat flour
2 cups bread flour
1 teaspoon active dry yeast

Directions:

1. Place all ingredients in a bread machine.


2. Choose white cycle and press start.
Maple Sourdough Bread

Prep time: 120 minutes


Servings: 4-6

Ingredients:

2/3 cup liquid sourdough starter


1/2 cup water
1 tablespoon vegetable oil
2 tablespoons bread
1/2 teaspoon salt

Rye and Sourdough Baguette

Prep time: Overnight


Servings: 8

Ingredients:

1 cup rye flour


1/2 cup bread flour
2/3 cup water
1/4 cup water
1/2 tablespoon salt
1 tablespoon white sugar
1 tablespoon olive oil
1 tablespoon caraway seed
1 cup rye flour
1 cup bread flour
1 cup sourdough starter
1/2 cup water (optional)
1 teaspoon salt (optional)

Directions:

1. Mix 1 cup rye flour, 1/2 cup bread flour, and 2/3 cup water.
Cover, and let stand at room temperature overnight.
2. Once ready, mix with 1/4 cup water, sugar, oil, seeds, salt and
flours. Knead until you achieve a soft dough.
3. Place in a greased bowl and cover. Allow to rise until it doubles.
4. Punch down and shape into loaves. Set aside and allow to rise.
5. Bake at 350 degrees for around 40 mintues.

Sourdough Breakfast Scones

Prep time: 40 mintues


Servings: 6-8

Ingredients:

2 1/2 cups bread flour


1/2 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 cup white sugar
1 teaspoon apple pie spice
1/3 cup cold butter
1 1/4 cups sourdough starter
2 tablespoons milk (optional)
coarse sugar, for garnish (optional)

Directions:

1. Set oven to 400 degrees.


2. Combine cream of tartar, baking soda, sugar, flour, salt, apple pie
spice in a bowl.
3. Add butter and mix together well.
4. Add starter and knead to form a soft dough.
5. Divide into several equal pieces and brush tops with milk and
sugar.
6. Bake for 15 minutes until golden brown.
Sourdough Olive Loaf

Prep time: 120 minutes


Servings: 6-8

Ingredients:

2 1/2 cups warm water


2 tablespoons active dry yeast
1 1/4 cup sourdough starter
1 teaspoon molasses
2 tablespoons olive oil
1 tablespoon salt
7 1/2 cups bread flour
1 cup kalamata olives, pitted and chopped
2 tablespoons chopped fresh rosemary
1 tablespoon sesame seeds

Directions:

11. Combine water and molasses.


12. Add salt and olive oil and mix well; add flour one cup
at a time and continue mixing.
13. Add herbs and olives.
14. Place dough on a floured surface and knead.
15. Place in a greased bowl and cover with a towel. Allow
to rise for about an hour.
16. Punch down to remove air once ready and divide into
two loaves.
17. Spray cold water on the loaves and sprinkle with
sesame seeds. Cover and allow to rise for half an hour.
18. Bake at 400 degrees for half an hour.
Poppy Seed Sourdough Loaf

Prep time: 80 minutes


Servings: 6

Ingredients:

3/4 pound butter


1 large onion, minced
2 tablespoons poppy seeds, or to taste
1 loaf sourdough French bread
1 pound white American cheese, sliced

Directions:

1. Set oven to 350 degrees.


2. Saute onions in butter until tender and fragrant.
3. Add seeds and mix well over low heat.
4. Slice diagonal slits onto the top of the bread.
5. Place a slice of cheese in between the slits and drizzle butter
mixture into it.
6. Wrap tightly with foil and bake for half an hour.
Stilton and Cilantro Sourdough Loaf

Prep time: 80 minutes


Servings: 6

Ingredients:

3/4 pound butter


Handful of cilantro, diced
1 large onion, minced
1 loaf sourdough French bread
1 pound Stilton cheese, sliced

Directions:

1. Set oven to 350 degrees.


2. Saute onions in butter until tender and fragrant.
3. Slice diagonal slits onto the top of the bread.
4. Place a slice of cheese and sprinkle cilantro in between the slits
and drizzle butter mixture into it.
5. Wrap tightly with foil and bake for half an hour.
Cheesy Herbed Sourdough Loaf

Prep time: 40 minutes


Servings: 6

Ingredients:

3/4 pound butter


1 cup of dried herbs (rosemary, dill, basil, oregano)
1 (1 pound) loaf sourdough French bread
1 pound white American cheese, sliced

Directions:

1. Set oven to 350 degrees.


2. Saute herbs in butter until tender and fragrant.
3. Slice diagonal slits onto the top of the bread.
4. Place a slice of cheese in between the slits and drizzle herb
mixture into it.
5. Wrap tightly with foil and bake for half an hour.
Garlic Herbed Butter Sourdough Loaf

Prep time: 80 minutes


Servings: 6

Ingredients:

3/4 pound butter


1 tablespoon garlic powder
1 cup dried herbs of choice
1 loaf sourdough French bread

Directions:

1. Set oven to 350 degrees.


7. Saute butter with garlic powder and herbs.
8. Slice diagonal slits onto the top of the bread.
9. Drizzle butter mixture into the slits.
10. Wrap tightly with foil and bake for half an hour.
Onion and Chive Sourdough Bread

Prep time: 80 minutes


Servings: 6

Ingredients:

3/4 pound butter


1 large onion, minced
1/2 cup chives, diced
1 (1 pound) loaf sourdough French bread
1 pack cream cheese, softened

Directions:

1. Set oven to 350 degrees.


2. Saute onions in butter until tender and fragrant.
3. Mix together chives with cream cheese.
4. Slice diagonal slits onto the top of the bread.
5. Scoop cream cheese mixture in between the slits and drizzle
onion mixture.
6. Wrap tightly with foil and bake for half an hour.
Sesame Sourdough Loaf

Prep time: 80 minutes


Servings: 6

Ingredients:

3/4 pound butter


3 tablespoons sesame seeds
2 tablespoons sesame oil
1 loaf sourdough French bread

Directions:

1. Set oven to 350 degrees.


2. Saute sesame seeds in butter until tender and fragrant.
3. Add sesame oil and mix well over low heat.
4. Slice diagonal slits onto the top of the bread.
5. Drizzle butter mixture into it.
6. Wrap tightly with foil and bake for half an hour.
Cheesy Garlic Sourdough Loaf

Prep time: 80 minutes
