My Latest Low-Carb Menu

 Grilled pork chops (rubbed with salt, pepper, paprika, oregano, garlic powder, and onion
powder), caramelized onions, pan-roasted green bell peppers (with garlic if desired), and
fresh tomato
 Oven-grilled zucchini and eggplant (thinly sliced, with olive oil, salt, dill, garlic powder, and
onion powder), kale chips (with olive oil, salt, garlic powder, and onion powder), feta cheese
cubes (with olive oil, smoked chili flakes, and oregano), plus a few slices of prosciutto
 Cauliflower chowder with bacon bits (Fry bacon in a large pot until crisp, remove from the
pot, dice and set aside. In the same pot, sauté 1 diced onion, a couple of diced garlic cloves,
1 bay leaf, and carrot if desired. Add 4 cups of chicken broth and half a cup of milk and
throw in ½ head cauliflower (chopped). Let it simmer for about 10 minutes, blend until
smooth, and cook for 2 more minutes. Serve with some fresh ground pepper, fresh parsley,
and bacon bits)
 Zucchini soup (In a pot, sauté 1 medium onion (diced) and 1 medium carrot (diced). Add 4
cups of chicken broth and half a medium zucchini, diced. Let it simmer for about 10 minutes
and add half a cup of milk. In a small bowl, whisk 1 egg with a bit of salt and a few
tablespoons of semolina and then pour it slowly into the soup)
 Grilled steak, pan-roasted broccoli with garlic, just a bit of steamed jasmine rice, a few pan-
roasted peanuts, vinaigrette of choice
 Pork and bell pepper kabobs and Greek salad
 Pan-seared salmon, roasted asparagus, and olive dip
 Pan-seared tuna, roasted broccoli with garlic, roasted Brussels sprouts with balsamic
vinegar and honey, fresh tomatoes
 Stuffed mushrooms (stuffed with a mix of sautéed onions, garlic, and bacon, sour cream,
parsley, cheese if desired) and salad of choice
 Salad greens (with a bit of sea salt, olive oil, and balsamic vinegar), fresh red bell peppers,
parmesan shavings or feta cheese cubes, fresh purple onion, sliced roasted steak or chop
(with mustard sauce if desired)
