Pancake Mix Cookies - We Are Not Martha
Looking for the easiest one-bowl cookie recipe? These pancake mix cookies cut down on the
amount of ingredients you need to get out and the amount of dishes you'll get dirty. They're packed
with chocolate chips and perfectly soft and chewy. Pancake Mix Cookies will become your new go-
to easy cookie recipe!
Ingredients
¾ cup (1 ½ sticks) unsalted butter, room temperature
½ cup granulated sugar
½ cup packed brown sugar
1 large egg
2 tsp vanilla
2 cups pancake mix
1 cup chocolate chips
Instructions
1. Preheat oven to 350 degrees and line two baking sheets with parchment paper or Silpats.
2. In a stand mixer or in a bowl with hand mixer, cream together butter, granulated sugar, and
brown sugar until light and fluffy, 3-4 minutes.
3. Mix in egg and vanilla until just combined.
4. With the mixer on low, blend in pancake mix until just combined, taking care not to over-mix.
Fold in chocolate chips.
5. Place bowl in fridge to let cookie dough chill for about 30 minutes.
6. Scoop about 3 Tbsp cookie dough (I use a #20 cookie scoop) onto prepared cookie sheets,
about two inches apart. Cookies will spread a bit.
7. Bake for 10-12 minutes, until cookies are just turning golden around edges. Let cool in pan for
a couple minutes before moving to wire racks to cool completely.
