Pancake Mix Cookies

Ingredients
¾ cup (1 ½ sticks) unsalted butter, room temperature
½ cup granulated sugar
½ cup packed brown sugar
1 large egg
2 tsp vanilla
2 cups pancake mix
1 cup chocolate chips

Instructions
1. Preheat oven to 350 degrees and line two baking sheets with parchment paper or Silpats.
2. In a stand mixer or in a bowl with hand mixer, cream together butter, granulated sugar, and
brown sugar until light and fluffy, 3-4 minutes.
3. Mix in egg and vanilla until just combined.
4. With the mixer on low, blend in pancake mix until just combined, taking care not to over-mix.
Fold in chocolate chips.
5. Place bowl in fridge to let cookie dough chill for about 30 minutes.
6. Scoop about 3 Tbsp cookie dough (I use a #20 cookie scoop) onto prepared cookie sheets,
about two inches apart. Cookies will spread a bit.
7. Bake for 10-12 minutes, until cookies are just turning golden around edges. Let cool in pan for
a couple minutes before moving to wire racks to cool completely.
