Cooking Demo “Chicken Caldereta with Papaya.”
Description:

Chicken Caldereta is a type of Filipino chicken stew. This version involves cooking the
chicken in a tomato-based sauce. Chicken Caldereta simmered to perfect tenderness in a tomato
sauce with carrots, and papaya. It's simple to make and budget-friendly yet hearty and tasty.
Perfect for family dinners and special occasions!

Original Kaldereta is a goat stew consists of goat shoulders, tomato sauce, potatoes,
spices, liver spread, olives, bell peppers, and hot peppers. Kaldereta is a Spanish-influenced dish
that became to be Filipinos’ favorite and made their versions. You can find this dish in all
Filipino cookbooks.
Ingredients:

 Chicken  grounded pepper


 onion  carrots
 garlic  papaya
 oil  banana ketchup
 salt  tomato paste

Procedure:

Preparation time: 10 minutes

Cooking time: 1 hour and 10 minutes

Step 1: Prepare the bowls and other equipment needed

Step 2: Marinate the Chicken with say sauce for 20 minutes.

Step 3: Pre-heat the casserole and put oil and wait to heat up.

Step 4: While waiting, Wash and peel the papaya and slice it into thin pieces and slice the carrots into
cube sizes.

Step 5: Dice the onions into small, bite-sized pieces and mince the garlic cloves.

Step 6: Saute the Onion and garlic for seconds.

Step 7: Place the marinated chicken then stir until chicken changes color.

Step 8: Add 3 tbs tomato paste, the cube carrots and sliced papaya then mix.

Step 9: Add water, then mix for a bit then simmer for 40 minutes.

Step 10: Add salt, ground pepper and banana ketchup for flavor then cook for 5 minutes.

Step 11: Once cooked transfer the dish into the prepared bowls then serve.

 Papaya: Rich in vitamins C, and a good source of folate, Vit. A, fiber.

 Carrot: Carrots are excellent sources of nutrients like potassium, antioxidants, and vitamin A,
among many others.

 Chicken: protein and essential vitamins and minerals like iron, zinc, choline, and vitamin B12
are found in many different cuts of chicken.

 Ground Pepper: Has Vit. K, C, E, A and B, calcium and potassium and is used for flavor.

 Onion: Onions provide a variety of nutrients, notably vitamin C, vitamin B6, folate, potassium,
and manganese.

 Garlic: It is rich in minerals like phosphorus, zinc, potassium, and magnesium.

 Salt: Used for flavor; it's important to monitor sodium intake.
