I. INTRODUCTION

Background of the Study

Chicharon is very popular as a snack and appetizer. Since the usual chicharon is usually made
from pork skins, the researchers attempted to find out the acceptability of the product, Squash
Chicharon, as a healthier alternative to the usual chicharon that can be bought in the markets using a
9-point hedonic scale.

Squash (Cucurbita) commonly known in the Visayan language as kalabasa, have long been used in
the Philippines as fleshy vegetables. They belong to the plant family that includes melon and cucumber,
come in many varieties. Some varieties of squash also produce edible flowers. While each variety may
have a distinct shape, color, size and flavor, ail varieties share some common characteristics. Regardless
of variety, all parts of the squash are edible, including the flesh, seeds and skin or rind. Like other
cucurbits, squash is recognized as an important source of vitamins and minerals just like vitamins A and
C. it also contains calcium and iron. It has very low calories, ideal to be a component in the diet plan.

V The idea of incorporating squash into chicharon crackers may seem unconventional, but the
researchers saw a unique opportunity to create something new and innovative. Traditionally, squash has
only been known for its flavor in squash chicharon, but there has been a lack of exploration into using
squash as the main ingredient. This gap in the market and in research inspired the researchers to take
on the challenge of developing squash chicharon crackers. By doing so, they aim to introduce a new and
healthier option for snack lovers while also exploring the untapped potential of squash in the chicharon
industry.

Through this experimental research, the researchers were motivated to develop nutritionaty delicious
snacks using squash as the main Ingredient. Nutritionally delicious and affordable food provides
nourishment, promotes health and growth, and pleasing to taste buds at reasonable onst.
