Puebla gastronomy is a combination
of local pre-Columbian food and
Spanish gastronomy due to the
colonial era.
Among the most
representative dishes of
Puebla gastronomy, the
mole poblano stands out.
MOLE POBLANO
The mole poblano was created
in Puebla de los Ángeles in the
17th century by the nun Sor
Andrea de la Asunción on the
occasion of the visit of Viceroy
Tomás Antonio de la Serna y
Aragón.
Due to the importance of the
culture and tradition of the
country, since 1991 and in the
month of June the Mole
Poblano festival is celebrated
throughout the country.
