Sustainability Resolutions
Leftover table grapes: Using leftover table grapes to make other products such as vinegar,
jam, juice, and fertilizers for the soil can be a sustainable, waste decrease, and cost-effective
approach for Albert Heijn.
1. Vinegar Production: Leftover table grapes can be used to make grape vinegar. Grapes
can be fermented to produce vinegar, useful for cooking and cleaning. According to our
research, the demand for vinegar in the Netherlands has increased almost by 7.5% per year.
2. Jam and Juice Production: The remaining grapes can be processed into jams and juices,
reducing waste, and boosting the company's revenue. Based on reports grape juice had a
revenue of 5.3m in 2024 and jam production of the total European imports of jams, 14% is
imported by The Netherlands.
3. Fertilizer Production: Grape core, including skins, pulp, seeds, and stems, can be utilized
to produce organic fertilizers, thereby reducing fertilizer pollution.
During the past 5 years, European imports of jams, jellies, purées, and marmalades have
increased the annual import growth rate by 6% in quantity and 7% in value. The import value
reached € 1.3 billion or 699,000 tons in 1917 (“Exporting jams and jellies to Europe,” n.d.).
To implement these strategies, Albert Heijn can consider establishing partnerships with food
and beverage manufacturers, wineries, or agricultural organizations to repurpose the leftover
grapes. By adopting these practices, AH can reduce waste, create additional revenue, and
contribute to sustainable and environmentally friendly business practices.
Reusing packaging. At Albert Heijn even though they have made a lot of progress in
reducing the waste in packaging, but still is a big problem. Based on the stuff that they have
done regarding packaging (see appendix) one strategy that they could adopt is to offer
coupons or discounts to the customers if they return the plastic package of the product that
they bought. In this way, Albert Heijn can reduce waste by reusing the same packaging for
the products or recycling the plastic packages to produce new ones.
