DEFINITION OF

TERMS
LEARNING OBJECTIVE
At the end of the meeting, the student shall be able to:
• Integrate relevant principles of anatomy and physiology,
biochemistry, health assessment and health education in
nutrition and diet therapy

✔represents the energy measurement of nutrients that
foods provide:
a. Proteins and carbohydrates each provide 4 kcal per
gram
b. Fats provide 9 kcal per gram
c. Alcohol provide 7 kcal per gram

✔In the metric system of measurement, the unit of
energy is the Joule (J)
✔1 kcal= 1000 cal
✔1 kcal= 4.184 J

qualities:
• It is safe to eat.
• It is nourishing or nutritious.
• It satisfies the consumer.
• It has satiety value.
• It offers variety.
• It is free from toxic agents.

physical, mental and
social well-being and
not merely the
absence of disease
MALNUTRITION

• is a condition of the body


resulting from lack of one or
more essential nutrients or it
may be due to an excessive
nutrient supply to the point
of creating harmful effects
• substance/s that the human body utilizes from foods that are
NUTRIEN consumed
• includes six categories: water, proteins, carbohydrates, fats,
T vitamins, minerals
• Essential: nutrients required for human life
• Non-essential: nutrients that the body utilizes but are not required for
life
NUTRIENT • Macronutrients: essential nutrients that provide energy and are
classified as proteins, carbohydrates and fats
• Micronutrients: essential nutrients that the body needs in small
amounts; they serve to regulate and control the functions of the body;
all micronutrients are either vitamins or minerals
• refers to the concentration of nutrients in each
NUTRIENT amount of a food source relative to its caloric
content; the higher the nutrient density, the
DENSITY greater the nutritional value in a small amount
of food
• refers to certain segments of the population which by
NUTRITIONALLY virtue of age, physiological status, occupation or
AT-RISK GROUPS geographic location become more susceptible to
nutritional disorders
NUTRITION
• is the study of food in relation to health of an individual,
community or society and the process through which food is
used to sustain life and growth
NUTRITIONAL STATUS
✔The condition of the body resulting from the intake,
absorption, and utilization of food
NUTRITION CARE PROCESS
Is a systematic approach to providing quality nutrition
care.

Consists of 4 distinct, interrelated steps:
