Chilaquiles are a typical Mexican dish made with fried or

toasted tortillas slices that are cooked in a spicy sauce,


either red or green depending on the type of chili and
tomatoes used and has a multitude of regional variants. It
may contain other ingredients such as shredded chicken or
beef, flank steak, enchilada meat, cured meat, chorizo, eggs,
cheese, among many others. It is usually flavored with
cilantro or epazote.

According to Royal Spanish Academy the word "chilaquiles"


came from Nahuatl chilli 'chile', atl 'water' and quilitl 'edible
herb.'

The main ingredients are:


Tortillas cut into triangular pieces
Shredded chicken
1 Fried egg
For the sauce I used:
2 habanero chiles
4 tomatoes
2 cloves of garlic
Oregano leaves
1 onion
Salt to taste
I started by parboiling the chicken and frying the tortilla slices.
Next, I made the sauce by boiling the tomatoes, onion, garlic
and chilies in the chicken broth. Then I placed these ingredients
in the blender and I added salt, oregano and a little of the
broth. After, I sautéed the previously shredded chicken and
added the sauce at the end. Finally, I fried the egg and plated it.
