INDO-VEDIC FOOD
DAPUR USADA'S concept of 'Inda-Vedic' sources the best of Indonesia's amazingly diverse
array of ingredients and fuses them using the ancient principles of ayurveda to produce
modern, plant-based cuisine. By examining the environmental impact of our dietary choices we
are takingthe concept of'garden to table' to a holistic level. We coined it 'Soil to Soul', meaning as
much as possible we source organic, local produce.
INDO
Indonesia is one of the most bio-diverse countries on the planet and home to the Spice Islands,
including indigenous nutmeg, mace and clove. Indonesian cuisine is known for its complex
flavours acquired from the varied botanical ingredients available and the myriad of 'bumbu' or
spice mixtures. Our food is crafted with 100%Indonesian ingredients, many of them indigenous to
the island of Bali, embracing traditional techniques that include soaking, fermenting, steaming
and pounding to optimise flavour and nutritional value.
VEDIC
Veda means knowledge in Sanskrit. Ayur means life. Ayurveda is known as the science of life
and longevity. It is one of the world's oldest holistic medicine systems originating in India around
5000 years ago and it is very much alive today both in India and abroad. Ayurveda understands
optimal well-being as having a healthy digestive system and a balanced life. Food is seen as
medicine and spices are one of the main components in this philosophy.
HEALTH & CULTURE
Disease is a symptom of a lack of health. When health is restored disease disappears. True health
begins in the soil, a complex web of life that serves as the immune system of planet Earth. Our food
is a reflection of our soil. The way we treat our soil is a reflection of our humanity. As humans we
are united by our shared need for clean, healthy and nutritious food.
Food tradition is an integral part of culture, operating as an expression of cultural identity as well
as a means of cultural preservation. All cultures develop their own awareness of the earth and
how to live in harmony with it. Here at Dapur Usada we believe in preserving local Balinese
culture and fortifying it with a sense of ayurveda, makingit unique and increasing its benefits.
When we pass our heritage down through our food, it makes for healthier, happier lives for all.
With a pinch of amusement, below we explain the three doshas so that you can better recognise your
own constitution, so you might identify similarities that will assist your choice of food and lifestyle.
The dishes at Oapur Usada have been crafted with an overall balancing intention behind the blend of
ingredients and spices.
For a more in-depth understanding and accuracy in discerning your dosha type and imbalances,
we suggest you to visit a vaidya (Ayurvedic practitoner) at Or. Sujatha's Amritasiddhi centre in
Nyuh Kuning, Ubud.
VATA
Energy of the element wind and space. When balanced comes with a bubbly cheerfulness, you
are enthusiastic and full of energy, but may not sustain long. Once you have started talking you
may never stop. Full of thousands of creative ideas but not all will make their destiny [they need
pitta's driving force and organisation). You can eat lots of calories but they won't show up in your
body (making a kapha jealous of you!).
For you it will be orgasmic if you wake up in the morning and empty your bowel, as you may tend
to have sensitivity and challenges in your colon. Hence we recommend you to eat soft, juicy warm
food. Hydration can be an issue as you easily experience dryness. Keep yourself surrounded by
loving people, eat moist foods and have warm drinks.
PITTA
An expression of perfection achieved by balancing the element of fire and water. You have a
deep burning to transform, improve and make things better than how they are today. Very driven,
passionate and ambitious. You may feel you are always right but let it not come over as
arrogance. You can eat a horse and still be hungry! You may be irritable and snappy when hungry
and you are not served a hearty meal. Heat of a pitta can create inflammation and anger when not
calmed with alkalizing, cooling, staple foods. Enjoy our dal and stable whole grain carbs with lots
of vegetables and salad.
KAPHA
The loving soothing grounding energy of water and earth elements makes you happy-go-lucky, calm,
stable, loving and patient. You love to eat, some times more than your body needs or you are hungry
for. Your patience and slow steadiness can drive vata and pitta mad. Be mindful of being complacent
and getting stuck in the rut of doingthe same thingover and over. Follow a good cardio routine
(look at what vata's do and copy them) to keep yourself slim and fit, and enjoy less sweets and
carbohydrates. Fill your plate with beans and lentils and high-fibre vegetables and low fat.
1. SWEET PORRIDGE 60K
Made with heritage rice and mung beans. Topped with snakeskin fruit and
cinnamon compote, granola and fresh coconut. We soak our rice and
beans overnight to make them more digestible. A greatly nourishing dish

9. NGURAH'S SWEET POTATO ROSTI STACK
A spark of artistic creativity, sweet potato mixed with banana, sauteed red
cabbage, avocado sauce, topped with rucola. This dish makes for a nurturing

10. USADA'S KITCHARI 6SK
We make ours with heritage rice, split yellow mung beans, cauliflower,
moringa, pumpkin, and toasted sesame. Finished with a dollop of coconut
yoghurt and fresh coriander. This dish makes for a nurturing breakfast or
lunch.
Kitchadi is known to be a healing, detoxifying and nourishing recipe in Ayurveda. Balancingfor
all doshas. Easy to digest it is often prescribed by vaidyas asfast to clear ama [toxins] and
strengthen agni [digestivefire].

11. MASALA DOSA
Dapur's take on this classic is a thin, crunchy crepe filled with potatoes and
aromatic spices. Served with coconut-ginger chutney, our signature papaya
sambaI and a bowl of sambar soup.

12. PUMPKIN DAL WITH TAMARIND RICE MIX
Pumpkin cooked with yellow split mung bean, curry powder, mustard and
cumin seeds, and turmeric. Served with a tangy mouth watering tamarind rice
and cooling vegan cucumber raita (sauce made with coconut).

13. GREEN MUNG BEAN WITH THORAN 55K
Whole green mung bean cooked with ginger, tomato and Dapur Usada's signature
curry paste. Served with sauteed Malabar-style long beans and coconut with a crunchy
dosa to spoon the creamy dal.
Mung bean is the most easily digestible legume. Suitable for all dosha types it can detox heavy
metalsfrom the liver, especially lead.

ARTTEAS are beautifully crafted and are sourced from the best gardens in
Indonesia and the main producing tea countries. Some of them originate in
small family tea-plantations. These teas are only produced in limited quantities,

TURMERIC is native to the Indian Subcontinent and Southeast Asia. In India and Bali it is interwoven
into the culture, cuisine and the medicinal healing traditions. Along with Hinduism and Buddhism
the use of turmeric spread from India and Southeast Asia as monks used it to dye their robes in
its yellow/amber colour. This rhizome has anti-inflammatory, anti-bacterial and anti-viral properties
and it is best absorbed when mixed with pepper and oil. In India and Indonesia, almost no
savouryfood is cooked without it, and its' bright colour is always apparent in curries.

CACAO is native ta the Amazan basin in South America. Europeans introduced it to Europe and to the West
Indies and Asia. Unlike mostfruiting trees, cacao pod grows directly from the trunk or large branch of a tree
rather than from the end of a branch, similar to jackfruit. Cocoa beans may be cultivated under shade, as
done in agroforestry. Agroforestry can reduce the pressure on existing protected forests and conserve bio-
diversity. Pure cacao has been used as a culinary bitter spice. It decreases oxidation and inflammation
and has a stimulating effect. Excellent for pitta and kapha.

ABOUT OUR CULINARY TEAM
We treasure our Balinese kitchen team and we hope you can taste their love and passion in our
food. They are trained by chef Simon of New Earth Cooking and Dr. Sujatha Kekada from
Amrtasiddhi.
Simon laid the foundations for Dapur kitchen as it is today and he coined our "Soil to Soul"
concept. His deep respect of food combined with earth preservation is apparent in every dish.
He founded The New Earth Cooking School and extensive forest gardens, which became the origin
of most of his recipes.
Dur recipes are grounded in Ayurvedic wisdom thanks to DAPUR USADA co- creator, the well-
known Dr. Sujatha Kekada, Head Physician and Co-Founder of Amrtasiddhi, Ubud, Bali and a
certified Ayurvedic doctor [B.A.M.S.]. Before coming to Bali in 2004, Dr. Sujatha worked as an
Ayurvedic Doctor in one of the most respected and successful clinics in Kerala, South India She
has also practiced as Ayurvedic Consultant throughout Europe, Canada and at one of the top
Health Retreat Centres in Asia; COMO Shambhala Estate. At Amrtasiddhi she mentors Ayurveda
students through Internship programs.
Through DAPUR USADA, Dr. Sujatha and Simon intend to share their insights into the future of
healthful, culturally respectful food.
DAPUR USADA recognizes the interconnectivity and complexity of the biosphere and the yearning
for all living beings to express themselves freely. We are not separate from nature. We are all from
nature, manifesting ourselves through a complex ecosystem called 'our body'.
