Step 1: WELCOMING THE GUEST

(Stand at attention beside the door. Wear your best smile.

Receptionist: “Good morning/afternoon/evening, Sir/Ma’am. Welcome to Digitech


Restaurant. How may I assist you?”

Guest: “I need a table please.”

Receptionist: “For how many, ma’am?”

Guest: “For two please.”

Receptionist: “Smoking or non-smoking area, ma’am?

Guest: “Non-smoking please.”

Receptionist: “This way please.”

Step 2: ESCORTING/SEATING THE GUEST


Receptionist: Is this table comfortable for you Sir/Ma’am or would you like to
transfer to a different table?
Guest: Yes, thank you.
Waiter: Good day ma’am, I’m Lyla. I’ll be your waiter for this
afternoon/evening/day. Would
you like me to assist you with your table napkin, ma’am.”

Guest: Yes, please.

Step 3: OFFERING AND SERVING DRINK BEFORE DINNER


Waiter: “Would you like to order some drinks before the meal, ma’am?”

Guest: “Yes, please.”

Waiter: “Here’s our beverage menu.”

Guest: “Ok, thank you” (after a while) “Can I have pineapple juice, please.”

Waiter: “Certainly, ma’am. Excuse me.” (get the menu from the guest)

Waiter: “Here’s your pineapple juice, ma’am.” (serve the water also)

Step 4: PRESENTING THE MENU (Hold it properly. Open multiple


pages. Bring your Pen and Order Slip.)
Waiter: “Here’s our menu for your selection. If you are ready to order, just call my
attention.”
(leave the guest for a while)

Guest: (calling the attention of the waiter)

Waiter: Excuse me Sir/Ma’am, are you ready to take your orders?

Step 5: TAKING FOOD ORDERS (Stand at attention holding properly


your pen and order slip. Right side for American and French Service,
left side for Russian Service.)
Guest: Yes, here it is.

For my Appetizer, I would like to have:


For my Soup, I would like to have:
For my Salad, I would like to have:
For my Main Course, I would like to have:
For my Dessert, I would like to have:
For my Beverage, I would like to have:

Waiter: Ok Sir/Ma’am. Can I repeat your orders?

Waiter: Would that be all Sir/Ma’am?

Guest: Yes, thats all thank you.

Waiter: You’re welcome. May I please have the menu?


(Guest gives back the menu.)

Waiter: Thank you, Sir/Ma’am. Your orders will be served within 15 to 20 minutes.

Step 7 & 8: PLACING OF ORDERS IN THE KITCHEN AND


ASSEMBLING OF ORDERS
Step 9 & 10: SERVING AND CLEARING OF ORDERS (Serve according
to sequence. Check the Guest’s orders for reference. Mention the
name of the order upon serving.)
Waiter: Thank you for waiting Sir/Ma’am. Here’s your _____. Enjoy your meal!
1. Appetizer
2. Soup
3. Salad
4. Main Course
5. Dessert
6. Beverages

Waiter: Excuse me Sir/Ma’am, can I get your soiled dishes?

Guest: Yes sure.

Waiter: Thank you, Sir/Ma’am. I’ll be back for you next course.
(Serve next course. Continue doing so until all orders are served.)

Step 11 & 12: PRESENTING AND SETTLING THE BILL (Use the Bill
Folder. Never open.)
Waiter: Excuse me Sir/Ma’am. Here’s your bill.

Guest: Here’s our payment.

Waiter: Thank you, Sir/Ma’am. I receive _____. I’ll be back for your change and
your receipt

Step 13: BIDDING GOODBYE (Escort the Guest upon going out.)
Waiter: Thank you for dining with us Sir/Ma’am. We look forward to your next
visit. Have a good day/nice evening.
