Recipe: Red-Curry Chicken by Chané Sandor_2023

Ingredients (4 servings, tablespoon=10ml/g, teaspoon=5ml/g)


1 Pack - Chicken thighs 8 pieces (remove bones and fat)

Chopped Vegetables: (of your choice, can add or remove)


1 Yellow Onion
3 Tomatoes
1 Red Pepper – Capsicum
1 Garlic Bulb
3 Carrots
1 Zucchini

1 Tablespoon - Mustard Seeds


1 Cube - Chicken or Vegetable Stock
100gr - Tomato Passata/Puree
200ml - Coconut Milk or Cream
2 Tablespoons Parsley

Spices - Powder: (mild, half=not spicy, double=very spicy)


1 Teaspoon - Salt
1 Tablespoon - Pepper
1 teaspoon - Cinnamon
1 Tablespoon - Paprika
1 Tablespoon - Red chili pepper / cayenne
1 Tablespoon - Curry
1 Tablespoon - Turmeric
1 Tablespoon - Garam or Biryani Masala

1 Banana thin round slices


2 Cups rice
4 Tablespoons Coconut Flakes/Grated

Instructions:
• Boil the rice separately with some salt

• With 1 Tablespoon oil, fry the chicken pieces, onion and garlic
• Add 800ml water
• Add all the Spices
• Add Mustard Seeds, Chicken or Vegetable Stock and Tomato Passata/Puree
• Boil for 30 minutes on medium heat
• Add all the Vegetables
• Boil for 45 minutes on medium heat
• Add Coconut Milk or Cream and Parsley
• Boil for 5 minutes

• Dish-up cooked rice in a bowl, add the curry on top


• Sprinkle Coconut Flakes/Grated and add 10 Banana slices
