Purpose :

To know the fermentation process


of tempeh fungus or yeast
(Rhizopus oligosporus) on
soybeans and also to know how to
make tempeh Mozzarella.
Theory Review :
A. Tempeh is a food made from soybeans and processed through a
fermentation process using the microorganism Rhizopus oligosporus or
commonly known as tempeh starter/yeast.

B. Tempe bacteria and fungi help digest carbohydrates and protein in


soybeans, as well as remodeling the components of the soybean.

1. How to make Tempeh ?
• TOOLS :

• INGREDIENT :

Steps :
1. Boil the soybean seeds for 30 minutes, remove
and transfer to a bowl.

2. Soak the boiled soybeans for 1 night using clean


water.

5. add another ½ teaspoon of tempeh.

6. Print or wrap the soybeans using banana


leaves or plastic and then in Pram.

ready for consumption.
2. How to make Tempeh Mozzarella ?
INGREDIENTS :
1. 300 grams tempeh cut into small cubes
2. 100 grams grated cheddar cheese
3. 3 cloves garlic puree
4. 1 finely sliced spring onion
5. 1/2 teaspoon white pepper powder
6. 8 g small packets Royco chicken broth flavor
7. 250 grams mozzarella cheese cut into 1cm cubes
8. 100 grams wheat flour
9. chicken egg beaten well with 50 ml water
10. 200 grams panko

How To Cook TemZa?
1. Steam the tempeh until cooked. Remove. Shred
until smooth.

2. In a container, mix tempeh, cheese, garlic,


scallions, pepper, and Royco Chicken Flavored
Broth. Mix well.

3. Take 1 tablespoon. Round it, then flatten it. Add


mozzarela cheese slices.

4. Roll tempeh balls in flour, egg, and panko.


Remove. Freeze for 2 hours.

5. Try until golden brown. Serve warm.

There are several processes involved in preparing all the tools and materials,
