1. Why do you call it banh xeo?

Banh xeo, or "sizzling pancake", is a crispy rice flour pancake


filled with various ingredients. The name comes from the
sound it makes when the batter is poured into the hot skillet.
Banh xeo is very popular in Vietnam and can be found
nationwide in many stalls and restaurants.

2. How do you prepare the ingredients?


You need to prepare the batter by mixing rice flour, water,
and other ingredients in a large bowl until smooth and thin.
After letting it rest for 30 minutes, we'll start cooking the
filling, commonly it's pork belly or de-veined shrimp, with
shallot and garlic until fragrant, and transfer the filling to a
bowl and keep warm.

3. Is it hard to make?
No, it's very easy. You can pour in the batter over medium-
high heat and make sure it coats the bottom. Once it is
coated, turn the temperature down to medium, add some
filling and bean sprouts on one half of the pancake, then we
will cover it with a lid. After it's crispy golden, fold the other
half over, and transfer the pancake to a plate.

4. How do you eat it?


To eat, break off a piece of banh xeo, wrap it in lettuce with
some herbs, and dip it in the nuoc cham.
