**Chocolate Almond Truffles:**

**Ingredients:**
- 200g dark chocolate (70% cocoa or higher), chopped
- 1/2 cup heavy cream
- 1/2 cup almonds, finely chopped
- 1/4 teaspoon almond extract
- Cocoa powder, for coating
- Whole almonds, for garnish (optional)

**Instructions:**

1. **Prepare Chocolate Ganache:** Heat the heavy cream in a saucepan until it starts to
simmer. Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let it
sit for a minute, then stir until the chocolate is completely melted and smooth.

2. **Add Almonds and Flavoring:** Stir in the finely chopped almonds and almond extract into
the chocolate ganache until well combined. Allow the mixture to cool to room temperature, then
cover the bowl with plastic wrap and refrigerate for about 2 hours, or until firm.

3. **Shape Truffles:** Once the mixture is firm, use a spoon or a small scoop to portion out small
amounts and roll them into balls using your hands. If desired, press a whole almond into the
center of each truffle.

4. **Coat Truffles:** Roll each truffle in cocoa powder until fully coated. Place the coated truffles
on a baking sheet lined with parchment paper.

5. **Chill and Serve:** Refrigerate the truffles for another 30 minutes to set. Serve chilled and
enjoy the rich, decadent chocolate almond truffles
