If at the beginning of the year we celebrate Tet together, at the end of the year

there is Christmas, then the middle of the year is also a special occasion for the
family to gather. And during the mid-year ancestral ceremony, families will
cook banh xeo to enjoy. In Vietnam, banh xeo is a thin, golden yellow pancake
made from rice flour, coconut milk and turmeric powder. It is filled with a
delicious mixture of shrimp, pork, bean sprouts and green onions. The first bite
delivers a satisfying crunch, followed by a burst of flavor from the filling. The
combination of fresh herbs, lettuce and rice paper adds to the refreshing factor.
When dipped in sweet and fragrant fish sauce, the flavors blend beautifully.
Choosing banh xeo to enjoy at family gatherings, especially during the mid-
year ancestor worship ceremony in Vietnam because the crispy texture
symbolizes prosperity and sharing a common dish will bring everyone together.
I have been trying to make banh xeo at home, the sizzling sound when the
dough hits the hot pan always brings back unforgettable memories. The aroma
of coconut and turmeric fills the kitchen, and the anticipation from that first bite
is truly delightful.
