We are often asked about the relative average weight of different chicken cuts. Obviously, this
can vary quite substantially from chicken to chicken and the only data we currently have relates
to a study undertaken back in 1998. As part of this study, 10 chicken carcasses were cut up and
weighed with and without skin and these results are broadly indicative of the relative weights
of chicken cuts and may assist dietitians and nutritionists in their work. The diagram below
illustrates the relative weights of different cuts based on a half 1.5kg chicken carcass.
The breeding program that has led to improvements in the genetic strains used by the
Australian industry since 1998 is likely to have had some impact on the relative weights of
different cuts. We will update these figures once we have more recent data but for the
moment, below are the detailed average data based on 10 samples (average carcass weight of
approx. 1.5kg; this corresponds to a live weight of approximately 2.2kg):

HƯỚNG DẪN BẢO QUẢN HÀU SỮA
1. Hàu nguyên con chưa rửa sạch:
- Hàu loại 1: từ 10- 12 con/kg. Giá: 25.000đ/kg.
- Hàu loại 2: từ 15- 17 con/kg. Giá 20.000đ/kg.
- Hàu loại 3: trên 20 con/kg. Giá 17.000/kg.
Bảo quản
- Nếu bạn ăn ngay, bạn dùng bàn chải đánh sạch từng con, rửa sạch, sau đó chế biến.
Lưu ý: Khi đánh rửa, bạn cần cẩn thận vì vỏ hàu rất sắc, dễ đứt tay.
- Nếu chưa ăn ngay, bạn để hàu ra rổ, để chỗ mát có thể để được 1 – 2 ngày. Lưu
ý: Không rửa nước sạch vào hàu bởi hàu dễ hỏng.
Bạn nên dùng ngay khi hàng còn tươi sống để đảm bảo chất lượng, hương vị và hàm
lượng dinh dưỡng.
