Sinigang na Baboy, or Pork Sinigang, is a popular Filipino dish. It is a
type of cooking method that can be made with different proteins such as pork, fish, shrimp, beef, and chicken, and leavening agents such as tamarind, guava, green mango, calamansi, kamias, santol , and other native fruits. It is a sour soup that is not only delicious but nutritious because of the various vegetables used in it such as aba, string bean or petchay.
Sinigang that uses tamarind as its main souring agent is particularly
popular in the Tagalog region. This dish is a mainstay in Filipino dining and a favorite of many because of its delicious taste, tender juicy pork, and the sourness of tamarind. This is the perfect comfort food for rainy days or in sunny days. The ingredients used are string beans, tomatoes, onions, garlic and the most delicious rice porridge that gives sourness and flavor to the pork.
