COFFEE DESSERT PUDDING

Have you ever thought to eat your cup of coffee as a dessert? This delicious and super easy
Coffee Dessert Pudding is the perfect combination of an irresistible dessert and a true cup of
coffee!

It's made with a coffee pudding (no gelatine or agar agar, it's just made on the stovetop with
cornstarch) topped with a whipped fluffy coffee mousse made with only 3 ingredients: water,
sugar and instant coffee powder.

The coffe mousse on top is inspired by the popular Dalgona Coffee, but it's more sweet than the
classic Dalgona which is pretty strong!

The coffee pudding is sweet with a delicate coffee flavor that is enhanced by the coffee mousse
and made with only 4 ingredients: it's incredible quick and easy ot make!

If you prefer a delicate coffee flavor you can make the Cappuccino version: top the coffe mousse
with unsweetened whipped cream, surely everybody will love this coffee dessert!

INGREDIENTS

Coffee Pudding
110 g (1/2 cup) caster sugar or granulated white sugar
5 g (2+1/2 tsp) instant coffee powder
40 g (5 tbsp) cornstarch
500 g (2 cups+1tbsp) milk lukewarm

Coffee Mousse
60 g (5 tbsp) caster sugar or powdered sugar
10 g (2 tbsp) instant coffee powder
45 g (3 tbsp) water room temperature

Cappuccino Topping
240 g (1 cup) whipping cream chilled

INSTRUCTIONS
Coffee Pudding
1. In a medium size saucepan, place sugar, instant coffee powder and sifted cornstarch. Mix
well until combined.
2. Gradually pour lukewarm milk and mix until well combined and no lumps.
3. Bring to a boil over medium-low heat stirring often.
4. When start simmering, low the heat and let it simmer for about 6 minutes stirring constantly.
5. Remove from heat and pour into serving cups (I'm using 3 cappuccino cups and 3 espresso
cups).
6. Cool down at room temperature then put in refrigerator for about 2 hours to chill.

Coffee Mousse
1. In a medium size bowl place sugar, instant coffee powder, water and whip with a hand mixer
until get a pale whipped mousse.

Assemble
1. Place coffee mousse on top of the chilled pudding and unsweetened whipped cream on top
of the coffee pudding in the cappuccino cups and serve it.

NOTES
Store the Coffee Pudding in refrigerator for about 2-3 days.

Prepare the Coffee Mousse just before serving: it stays whipped for days, but it dries on top if you
store it in refrigerator, even if you covered.
