Hello & welcome to the April/May 2024 edition of
Chatterbox Magazine!

Hello and welcome to the April/May 2024 edition of the magazine. Spring has
arrived and we are heading in the right direction to the summer months and I can’t
wait!! Anyway back to reality and time to say thank you to all of my readers and
subscribers who not only support the businesses in the magazine by using the
services advertised but also support myself and the magazine with letters of
thanks, articles and poetry - it is all much appreciated. If you use a business in Chatterbox is owned by
Chatterbox, please let them know where you saw it. We need to support our local Christine Jones

Pea and Mint Risotto
Collop Monday is the Monday before Ash Wednesday each year. Named after the traditional dish of the day. Collops
consist of slices of leftover meat (such as beef) along with eggs. It is eaten for breakfast and is part of the traditional Lenten
preparations. The meal provided families with a little meat as well as being the source of the fat for the following day's
pancakes.
Preparation time: 10 mins Cooking time: 25 mins Serves 4
1. First, pour the stock into a large pan, and heat to a gentle simmer.

2. Heat the oil and butter in a large non-stick frying pan over a low heat.
Add the onion and a pinch of salt. Sweat for about 5 minutes until soft
and translucent, then stir through the rice, making sure that the grains
are completely coated. Increase the heat to medium-high, pour in the Ingredients:
1 litre light vegetable stock
wine, and let it simmer for a couple of minutes until the alcohol has
1 tbsp olive oil
evaporated.
1 knob butter
1 onion, finely chopped
3. Reduce the heat slightly, and add the simmering stock a ladleful or 350g risotto rice, such as Arborio
two at a time, stirring frequently with a wooden spoon; when each 1 large glass dry white wine
addition of stock has been absorbed, add some more. Continue like this 150g frozen peas, cover with boiling
for about 20 minutes until the rice is cooked; it should still have a bite to water for 3 minutes, then drain
it. Use more or less stock as required - every risotto is different. 50g Parmesan cheese, freshly grated

4. Stir through the peas, Parmesan, mint, and basil. Season well with 1 handful fresh basil leaves

Eton Mess Scones


The traditional strawberry, clotted cream and meringue pudding Ingredients:
served on easy-to-make scones - Brilliant! 400 grams self raising flour (plus extra for

1 jar strawberry jam (good)
3. Turn dough out onto a lightly floured work surface and pat out to a 2 meringue nests (crumbled into chunks)
2.5cm thick round. Stamp out 12 x 5cm rounds, dusting the cutter with 200 ml clotted cream
flour as you stamp - you'll need to re-pat trimmings to make 12. Put
the rounds onto floured baking sheets, brush the tops with milk and
sprinkle with a little more sugar. Bake for 12-15 mins until golden.

4. To serve, lightly mash the strawberries with the jam, and fold the
meringues into the clotted cream. Dollop some strawberry mixture
onto each split scone, and top with a dollop of meringue cream.

Music
The most successful band of the decade was Swedish group 'ABBA' who hit the
number one spot 7 times, closely followed by 'Slade' with 6 number one's, Rod
Stewart with 5 and T-Rex with 4. The most weeks at number one was nine which
was achieved by 'Queen' in 1975 with 'Bohemian Rhapsody,'
Paul McCartney and Wings with 'Mull of Kintyre' in 1977 and
again in 1978 by John Travolta and Olivia Newton-John with
'You're the One that I Want.'
Fashion
For parties or dances men wore suits with flares, wide lapels and
wide kipper ties, whilst ladies wore long dresses. For everyday
wear the fashion was flared jeans, Simon shirts, wide collars, maxi skirts, platform boots
and dresses and shirts with psychedelic and geometric prints.

The 70's was arguably England's worst footballing decade, which saw us fail to qualify for both 1974 and
1978 world cups. The Olympics were held in 1972 in
Munich (summer) and Sapporo (winter) and in 1976
in Montreal (summer) and Denver and Innsbruck,
(winter). Great Britain's best performance of the decade was the 1972 Summer Olympics where we
earned 18 medals, including nine gold. Popular toys and games included the stylophone, spirograph, dinky
cars, space hoppers and Sindy.

'Mastermind' (1972), 'Some Mothers Do 'Ave 'Em' (1973), 'Porridge' (1974), 'Fawlty Towers' (1975),
'Swap Shop' (1976), 'The Krypton Factor' (1977), 'Grange Hill' (1978) and 'Minder' (1979).
