Project Charter: Sauce & Spoon Project Proposal: Menu Tablets

Project Summary

Sauce & Spoon would like to launch a pilot rollout of tabletop menu tablets at two of
our restaurant locations, Sauce & Spoon North and Sauce & Spoon Downtown. That
way, guests can place their orders on the tablets as soon as they arrive at the
restaurant, rather than waiting for a server to attend to them.

Project Goals

● Increase our product mix


● Decrease our average table turn time by about 30 minutes
● Reduce food waste
● Improve customer service by serving delicious meals and provide an enjoyable
dining experience in under an hour
● Keep operating expenses below 65% and our profit margins above 8% in order
to focus on providing high-quality food.
● Ensure each investment over $100K undergoes analysis and results in a
positive return
● Increasing our average daily guest counts by 10%

Deliverables

● Testing out the tablets in the bar area


● Upselling appetizers or promoting certain entrees
● Consider tablet packages that include menu add-ons and coupons
● Serve at least four parties per table between hours of 5-10 p.m.
● Create training plan for staff on the new system
● Configure tablets properly so they integrate into the existing systems
● Hire good quality staff to prevent high turn-over

Scope and Exclusion

In-Scope:
● Reducing food waste
● Capturing metrics on staff performance
● Customer satisfaction with service

Out-of-Scope:
● Adjusting the policy on order return
● Satisfaction of the kitchen staff

Benefits & Costs

Benefits:
● Customers can be assisted with quick, easy ordering options, leading to better
customer service and increase sales
● Launch of the tablets would be a positive for staff as ordering is more
streamlined and efficient
● Reduction of food waste, so the company is spending less money
● Can provide data on customer’s orders to help guide decisions in the future for
the business

Costs:
● Training materials and fees - $10,000
● Hardware and software implementation across locations - $30,000
● Maintenance (IT fees through EOY) - $5,000
● Updated website and menu design fee - $5,000
● Other customisation fees - $550

Appendix:

● There are concerns about staff satisfaction – Need to revisit how to mitigate
existing employee dissatisfaction after the tablet launch
● Possibility of hiring more kitchen staff – consider if this is necessary?
● Consider adjusting the policy on order return – decided if it needs to be
included as part of the tablet launch or separately
● Hardware and software implementation prices seem quite high, could consider
rolling out the tablet at one location first and test out its effectiveness before
rolling out in other locations
