Raw Material Source: Dried pepper berries, Piper nigrum L., conforming to all
applicable provisions of the Federal Food, Drug, and
Cosmetic Act.

Volatile Oil: 6% to 8%
Steam Volatile Oil (Modified Clevenger Method)

Percent Piperine: 12% to 14%

Appearance: A green viscous liquid, pourable at room temperature.

Aroma and Flavor: The aroma is mildly aromatic, with an underlying pungent
scent. The flavor, initially warm and pleasant, is followed
by a pungent, biting sensation.

Dispersibility: Dispersible in water (polar carriers) and oil (nonpolar


carriers) with agitation.

Shelf Life: We recommend dry warehousing in full, tightly sealed


containers at temperatures not to exceed 75° F. Shelf
life under these conditions is one year from date of
manufacture.

Uses: Used in a wide variety of food products, including meats,


pickles, soups, dressings, sauces, and gravies.

Replacement/Usage Level: One part should replace approximately 8 parts of ground


black pepper.
