Balamban Liempo is a popular Filipino dish known for its flavorful and tender grilled pork belly.

Here's a
simple recipe to make Balamban Liempo at home:

Ingredients:

1 kg pork belly, sliced into thin strips

5 cloves garlic, minced

1 teaspoon ground black pepper

1 tablespoon soy sauce

1 tablespoon fish sauce (patis)

2 tablespoons calamansi juice or lemon juice

2 tablespoons banana ketchup

1 tablespoon brown sugar

1 teaspoon salt

Bamboo skewers, soaked in water for 30 minutes (if grilling)

Cooking oil for basting

Instructions:

In a bowl, combine the minced garlic, ground black pepper, soy sauce, fish sauce, calamansi juice (or
lemon juice), banana ketchup, brown sugar, and salt. Mix well to make the marinade.

Place the pork belly slices in a shallow dish or resealable plastic bag. Pour the marinade over the pork
belly, making sure each piece is coated evenly. Marinate the pork belly in the refrigerator for at least 4
hours, or preferably overnight, to allow the flavors to penetrate.

If grilling, preheat the grill to medium-high heat. Thread the marinated pork belly slices onto bamboo
skewers, dividing them evenly.
Grill the Balamban Liempo skewers over direct heat, basting them with cooking oil occasionally to
keep them moist and prevent them from sticking to the grill. Grill each side for about 3-4 minutes, or
until the pork belly is cooked through and nicely charred.

If baking, preheat the oven to 375°F (190°C). Place the marinated pork belly slices on a baking sheet
lined with parchment paper or aluminum foil. Bake in the preheated oven for 25-30 minutes, or until the
pork belly is cooked through and caramelized.

Serve the Balamban Liempo hot off the grill or out of the oven, accompanied by steamed rice and your
favorite dipping sauce, such as vinegar with garlic and chili.
