Classic Spaghetti Carbonara


Ingredients:
● 350g spaghetti
● 150g pancetta or bacon, diced
● 3 large eggs
● 75g grated Parmesan cheese
● 2 cloves garlic, minced
● Salt and black pepper to taste
● Fresh parsley, chopped (optional)
Instructions:
. Cook spaghetti in a large pot of salted boiling water until al dente. Drain,
reserving 1/2 cup of pasta water.
. In a skillet over medium heat, cook pancetta until crispy. Add minced
garlic and cook until fragrant, about 1 minute.
. In a bowl, whisk together eggs, Parmesan cheese, salt, and black pepper.
. Add cooked spaghetti to the skillet with pancetta and garlic. Remove
from heat and quickly stir in egg mixture, tossing to coat the pasta. If the
sauce is too thick, add reserved pasta water gradually until desired
consistency is reached.
. Serve immediately, garnished with chopped parsley if desired.
