INTRODUCTION
The demand for culinary services is becoming increasingly complex and upscale as
people's quality of living improves. Since eating at home frequently takes time and the
standards for professionalism in the job are very high, many people find that they do not
have enough time to eat at home. Additionally, dining at restaurants and hotels always
fosters a pleasant and polite atmosphere appropriate for interacting with friends and
coworkers. Consumers visiting restaurants also have numerous opportunities to sample
the traditional culinary traditions of different areas and nations. Customers would
prioritize restaurants with traditional cuisine to enjoy with family or companions. Ngọc
Sương restaurant is well recognized for this reason.

CHAPTER 1. INTRODUCTION OVERVIEW OF THE RESTAURANT
AND EVENTS

1.1. RESTAURANT INTRODUCTION


• The history of the restaurant

Established in 1955 right at the foot of Quy Mountain in Cam Ranh Bay, in 1990 the
first Ngoc Suong Restaurant in Saigon appeared in an old villa on Le Van Sy Street.
Becoming a brand loved by Saigon people, in 1994 Ngoc Suong Saigon built a new
location at No. 6, Hoang Viet Street, Tan Binh District.

In 2005, another Ho Chi Minh City Ngoc Suong restaurant was opened at 106, Suong
Nguyet Anh, Ben Thanh, District 1. The villa has a semi-classical architectural style and
is also the work of a famous Ho Chi Minh City architect, recreated from images of the
legendary luxury yacht.

• Restaurant size

Ngoc Suong Saigon Suong Nguyet Anh Restaurant has a capacity of 300 seats,
following an architectural style that is a delicate blend of modern and classic. The
restaurant has become a famous brand, a familiar destination for the people of Saigon,
the whole country, and international tourists.

1.2. RESTAURANT EVENTS INTRODUCTION

Event name: “Seafood Week Summer”.

Purpose of organizing the event: cultural exchange of 3 regions and preparation of


diverse dishes with rich seafood ingredients from Vietnam.

The restaurant launched a seafood week event in the summer. Summer is the best and
richest seafood season, so the restaurant chose summer to hold the event.

The restaurant has chosen the freshest ingredients to prepare for the event. The chefs
have prepared dishes carefully and suitable for regional tastes for customers
participating in the restaurant's events.

The restaurant begins serving customers on the first 2 days from 6 pm to 10 pm. With a
promotion program for customers who come to the restaurant to dine during the
restaurant's seafood week. The last day is the day to announce the restaurant's lucky
winners with attractive gifts. The restaurant gives out lucky draw tickets when
customers come to the restaurant during the 3 days of the event. Starting to serve
customers from 2:00 p.m. to 10:00 p.m., serving earlier than the first two days helps
customers experience more about regional seafood. With attractive cultural programs
that the restaurant has prepared for this week, and is held after 3 days.

Takes place in 3 days: in the summer on June 14, 15, and 16.

SUONG RESTAURANT

2.1. EVENT ACTIVITIES AND EVENT SCHEDULE

❖ June 14

The first day of the festival is "Summer Seafood Week". The restaurant will prepare a
lot of seafood for diners coming to Ngoc Suong restaurant. The restaurant will be open
from 18:00 to 22:00 on the first day of the festival. With a banquet hall size of more than
250 seats, the design team carefully cares for it to make diners feel like they are
immersed in the sea space. In addition to serving A-la-cart as usual, the restaurant will
have set menus.

Ngoc Suong Restaurant on the first day will have outstanding seafood set menus such
as

• This fresh summer menu : (Seafood salad, Stir-fried squid with vegetables,
Crab hotpot)

Starting the festival, Ngoc Suong restaurant organized a music festival with the theme
"Enthusiastic Summer" with the participation of many singers such as Hoa Minzy, Duc
Phuc, and Vu Cat Tuong.

Ngoc Suong will organize a "SEAFOOD DAY" contest for diners who intend to
challenge themselves with 8kg of seafood including many types such as crawfish, crabs,
green mussels, scallops, lobsters,...

The program rules do not specify which gender has a ticket to Ngoc Suong restaurant to
participate in the program. The prize for the winner will be 10 million VND in cash and
2 tickets to the third night of the Seafood Week program. If the challenge fails, the player
will pay the restaurant a fee of 1 million VND.

After participating in the restaurant's program, guests will be able to eat and drink for
free and the waiter will hand them vouchers for a lucky draw on the last night of the
festival.

❖ June 15

Come to day 2 of the festival program. Ngoc Suong Restaurant will bring more delicious
and attractive dishes to diners as well as fun activities at the restaurant. The restaurant
will open for service from 18:00 and close at 22:00. With a banquet hall size of more
than 250 seats, carefully designed by the design team, diners feel like immersing in the
sea space.

When you visit the restaurant, the receptionist will warmly welcome you and introduce
you to the restaurant's "Summer Seafood Week" program. To create excitement for
customers when you eat here. The restaurant will set up a display house of rare seafood
like Alaskan king crab and shrimp, Fourshu lobster, and Fugu pufferfish... along with
other types of seafood.

After that, The customers will be led to the table by the restaurant receptionist at their
request. In addition to the restaurant serving A-la-cart dishes, during the three days of
the holiday program, the restaurant will launch delicious seafood combos for customers
to choose freely

wine, Roasted Crab with Salt)

To make the meal more bustling and fun, The chefs will participate in cooking
demonstrations in the open kitchen for diners to admire, allowing them to see how The
chefs transform raw ingredients into delicious dishes. In addition, guests can choose
ingredients for the chef to prepare directly for their meal

After watching the performance, the guests will have a gentle, quiet dining space with
Jazz music, and enjoy glasses of red and white wine under flickering candlelight,
creating a relaxing atmosphere and romantic feeling. At this time, the wait staff will
come to each table and give away preferential vouchers for the last day of the "Summer
Seafood Week" program series

❖ June 16

On this last day, we at Ngoc Suong restaurant will let you experience unforgettable
moments during a meal on a mid-summer day in June. On this day, the restaurant will
open earlier than usual and will open at 14:00 and close later at 23:00. Today, the
restaurant will re-establish and expand with a capacity of up to 500 guests

When you arrive at the restaurant at 2:00 p.m., the receptionist will ask if you want to
participate in the game "Hands on or by hand" with your family or lover. If you need to
participate, the staff will lead everyone to the "Happiness" room of the restaurant, which
will be decorated in the style of a fishing village, and they will provide materials such
as shells of all kinds. Seafood, glue, stickers, scissors, zinc, ribbon,... for players. Our
restaurant will set a time limit of 60 minutes to create a handmade product from available
materials. If any team wins first, second, or consolation prizes, the restaurant will give
the family a meal consisting of three dishes of their choice for the first prize, and two
dishes for the second prize. Finally a consolation prize with one dish of your choice

After participating in the game, you will be invited to the party area. On the last day of
this "Summer Seafood Week" series, our restaurant will open a seafood buffet for diners
to enjoy. Guests can enjoy a variety of dishes prepared in the culinary style of three
regions of Vietnam. During the party, we will create activities to liven up the dining
space. Children can play games with clowns that the restaurant invites to create surprises
for the children. In addition, our restaurant will serve entertainment with the theme
"Fishermen and children" so that guests can see more clearly and understand more about
the fishing village profession. Fishermen's preservation when they go to sea ensures that
the ingredients provided to Ngoc Suong restaurant are always fresh. Our restaurant will
randomly select two to three guests to participate in this music program

Coming to the key performance to end the series of "Summer Seafood Week" our
restaurant will organize a lucky draw. Based on the numbers marked on the vouchers
that the staff gave out the previous days, our restaurant will mix the secret leaves. After
that, we will read the numbers to find out that the owner of the highest position in
"Summer Seafood Week" will receive 3 tickets to travel to Phu Quoc, and the second
lucky person will receive a gift of "Seafood set includes one King crab, one Alasca
shrimp, and one kilogram of abalone" the encourager will receive a seafood SuShi
including fish types: Muguro, Ika, Tako, Hatate.

money,... are still within the restaurant's previously stated goals. To better understand,

3.1 EVENT MARKETING PREPARATION

3.1.1. Marketing

To better spread and promote the restaurant's Seafood Week image, we have posted
advertising images on social networking sites to let people know more information about
this seafood festival. We posted Seafood Week promotional images on Facebook,
Instagram, and TikTok on the restaurant's fanpages.

Ngoc Suong restaurant. Famous and long-standing restaurant in District 1, Ho Chi Minh
City. It will be the ideal place for those who love seafood because this weekend there
will be an extremely attractive seafood week for you to enjoy within 3 days. The menu
of more than 200 extremely rich dishes and fresh seafood will bring you wonderful and
unforgettable flavors. For example, grilled oysters are a favorite dish of many young
people today. Ngoc Suong fish salad is an exclusive dish and was voted the best-selling
dish at the restaurant and there are countless dishes that you can come and enjoy. Finally,

Ngoc Suong is a restaurant brand with a 64-year tradition. The process of forming,
maintaining, and developing Ngoc Suong is associated with the fluctuations, ups and
downs of history. But even though times have changed, the sustainable values that Ngoc
Suong has always kept since his father started doing business until now are always true
values, preserving the beauty of Vietnamese culture hidden in each dish. , each space to
enjoy the cuisine. Ngoc Suong Saigon's journey is not only a business journey but also
a journey of people who always want to enhance the beauty of Vietnamese cuisine and
preserve and promote true values.

However, recently Ngoc Suong has encountered many difficulties due to brand
counterfeiting. The original Ngoc Suong Saigon brand has been exclusively registered
since 1993 with both its name and anti-counterfeit logo to protect the fairness of its
brand and not let customers be deceived.

the restaurant through each period so that diners who have experienced here as well as
first-time diners will understand more about the restaurant. Ngoc Suong Restaurant has
gone from a fairly small restaurant to a famous and longstanding restaurant standing
firmly in the busiest place in Ho Chi Minh City.
