“UTILIZATION OF RED BEANS FLOUR AS A PASTRY MIX IN THE SUPPLEMENTARY
FOOD PROGRAM TO PREVENT ANEMIA IN PREGNANT WOMEN IN CENTRAL JAVA”

Based on data from the Badan Pusat Statistik (BPS), red bean production reached more than
37,578 kg in 2020. Even though there was a decline in the previous 2 years, the area harvested
for red beans in Central Java still continues. Seeing the potential for large harvests from this
area, it is very important to use innovation in processing these crops so that they can provide
optimal benefits, especially for pregnant women in the Central Java. Apart from being a source
of vegetable protein, red beans are also rich in vitamins, minerals and fiber which are important
for maintaining overall body health, including digestive health and preventing heart disease.
The PMT program for pregnant women is important to reduce the risk of pregnancy
complications and improve the health of the mother and baby to be born. PMT for pregnant
women includes providing additional food that is rich in important nutrients such as protein,
iron, calcium, folic acid, vitamins A, C, D, and others. Therefore, the choice of raw materials for
red beans which are processed into flour as raw material for PMT cakes for pregnant women is
based on the high iron content in red beans so that they can provide additional protein intake for
pregnant women to prevent anemia. Adequate nutritional intake during pregnancy is very
important to prevent anemia, optimal fetal growth, and reduce the risk of pregnancy and
childbirth complications. Some possible impacts include an increased risk of premature birth,
low birth weight, and complications during childbirth. In addition, pregnant women with anemia
may feel more tired, weak, and less able to carry out daily activities.

Anemia is a public health problem throughout the world and generally occurs throughout the
world, especially in developing countries like Indonesia. Based on data from the world health
agency, the World Health Organization in 2014 reported that the prevalence of anemia in
pregnant women in the world ranged from 20-89% and the prevalence of anemia in pregnant
women in Asia was 48.2%. Based on Basic Health Research data, the incidence of anemia in
pregnant women in 2018 was 48.9%, an increase compared to 2013, namely 37.1% occurred in
vulnerable pregnant women aged 25-34 years. The use of red bean flour in making cookies is a
concrete example of efforts to achieve the 3rd Sustainable Development Goal set by WHO,
namely "Ensuring Healthy Lives and Improving Welfare for All Ages." Cookies enriched with
red bean flour contain protein. vegetables, iron, fiber and antioxidants which are important for
the health of pregnant women and the growth and development of the fetus. Although cookies
contain nutrient-rich red bean flour, it is important to consume it in moderation and balance it
with your daily diet. Promotion of the use of red bean flour in pastries can also be a forum for
providing education about the importance of nutrition during pregnancy and how to prevent
anemia. This is in line with WHO's efforts to increase public awareness and understanding of
the importance of good health and nutrition.
Therefore, the use of red bean flour in making cookies not only provides a delicious snack
option, but also supports global efforts to improve the health and welfare of society, especially
for pregnant women and their unborn babies. The use of red bean flour as a mixture in making
dry cakes has proven to be effective in increasing the protein content of cakes.
