Beef and Pork Chili

A personal wintertime favorite, this hearty chili has just enough heat to keep the cold at bay.
Definitely a meal to plan ahead due to prep time and how much you might have left over!

Ingredients
● 1 pound of round steak*
● 1 pound of pork chop*
● Salt & Pepper
● 1 onion
● 2 bell peppers (1 red, 1 green)
● 2 heads of garlic
● 1 bag of red beans
● 2 cups of water
● 1 large can of tomatoes
● 6 tbsp of chili powder
● 1 tbsp of chili flakes
● ½ tsp of oregano
● ½ tsp of thyme
● 3 tbsp butter
● 3 tbsp flour

Prep-Work:
● Soak beans in large pot of water overnight, or for at least 8 hours
● After soaking, cook beans on low heat for 2 hours

Directions
● Chop steak and pork chops into cubes
● Place cubed meat in plastic bag with flour and shake to coat
● Place coated meat in oiled pan until browned
● Season meat and set aside in separate bowl
● Chop onion and bell peppers, and crush garlic, saute
● Place sauteed vegetables in bowl with meat
● Drain water from bean pot, adding in meat and vegetables
● Add in 1 large can of chopped tomatoes
● Add 6 tbsp of chili powder, 1 tbsp of chili flakes, and ½ tsp of oregano and thyme
● Add in enough water to cover
● Bring to a boil then let simmer on low for 1 hour, cover with lid
● Melt 3 tbsp of butter, mixing in 3 tbsp of flour (Rue)
● Stir in rue and serve
*Add in as much meat as you’d prefer to your chili
