Adobong tuyo is a delicious Filipino dish made with dried fish cooked in adobo sauce.

Here’s a
simple recipe for adobong tuyo:

Ingredients:
- 6 pieces dried tuyo (salted dried fish)
- ¼ cup vinegar
- ¼ cup soy sauce
- 4 cloves garlic, minced
- 1 onion, sliced
- 1 bay leaf
- ½ teaspoon whole peppercorns
- 2 tablespoons cooking oil
- ½ cup water (optional)
- Sugar, to taste (optional)

Instructions:
1. Rinse the dried tuyo under running water to remove excess salt. Pat them dry with paper
towels.
2. Heat oil in a pan over medium heat. Fry the dried tuyo until lightly browned on both sides.
Remove from the pan and set aside.
3. In the same pan, sauté garlic and onion until fragrant and translucent.
4. Add vinegar, soy sauce, bay leaf, and peppercorns to the pan. If desired, add water to dilute the
sauce a bit.
5. Bring the sauce to a simmer, then add the fried dried tuyo back into the pan.
6. Let it simmer for about 10-15 minutes or until the sauce has thickened and the flavors have
melded together. You can adjust the seasoning by adding sugar if desired.
7. Serve hot with rice.
