Adobong toyo is a variant of the traditional Filipino adobo where soy sauce is the primary

ingredient instead of vinegar. Here’s a recipe for adobong toyo:

Ingredients:
- 1 kg chicken or pork, cut into serving pieces
- ½ cup soy sauce
- ½ cup water
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 bay leaf
- 1 teaspoon whole peppercorns
- 2 tablespoons cooking oil
- Sugar, to taste (optional)

Instructions:
1. In a bowl, marinate the chicken or pork in soy sauce, garlic, onion, bay leaf, and peppercorns
for at least 30 minutes to an hour.
2. Heat oil in a pan over medium heat. Remove the meat from the marinade and set aside.
3. Sauté the garlic and onion until fragrant.
4. Add the marinated meat to the pan and cook until lightly browned on all sides.
5. Pour in the marinade mixture and water.
6. Bring to a boil, then lower the heat and let it simmer uncovered until the meat is tender and the
sauce has reduced and thickened, about 30-45 minutes.
7. If desired, adjust the seasoning by adding sugar to balance the flavors.
8. Serve hot with steamed rice.
