Vegetarian Chickpea Curry:

1. Ingredients:
1. 2 tbsp olive oil
2. 1 onion, diced
3. 2 cloves garlic, minced
4. 1 tbsp ginger, grated
5. 2 tsp curry powder
6. 1 tsp cumin
7. 1 can (400g) chickpeas, drained and rinsed
8. 1 can (400ml) coconut milk
9. 200g spinach
10. Salt and pepper to taste
2. Instructions:
1. Heat olive oil in a pan over medium heat. Add onion, garlic, and ginger,
sauté until softened.
2. Stir in curry powder and cumin, cook for another minute.
3. Add chickpeas and coconut milk, bring to a simmer.
4. Let it cook for 10 minutes until chickpeas are tender and sauce has
thickened.
5. Stir in spinach and cook until wilted.
6. Season with salt and pepper to taste.
7. Serve hot with rice or naan bread.
