Plain Scones

INGREDIENTS
● 225g (8oz) plain flour
● Large pinch of salt
● 5ml (1 tsp) baking soda
● 10ml (2 tsp) cream of tartar
● 10ml (2 tsp) caster sugar, optional
● 90g (3oz) butter, margarine or shortening
● 150ml (5fl oz) milk, very cold
● Extra cream for brushing

METHODOLOGY
● Sift the flour, salt, baking soda, cream of tartar and sugar into a mixing bowl
● Using the fingertips, rub in the fat until it is evenly distributed
● Quickly stir in the milk with a fork, adding extra if necessary to achieve a soft but not
sticky dough
● Turn the dough out onto a floured work surface and knead lightly and quickly until
smooth
● Laminate by cutting the dough into quarters and stacking the portions one on top of the
other. Press down into a square and wrap tightly in cling film. Chill until ready to cut.
● Roll the dough out about 3.5cm (1 ¼”) thick. Cut into 5cm (2”) rounds with a pastry
cutter or mark into rough triangles with a knife
● Brush with cream and sprinkle optionally with sugar. Set evenly spaced apart onto an
ungreased baking sheet.
● Bake at 450F for 12-15 minutes
