FISH WITH LEMON

MYRTLE
AND WARRIGAL GREENS
Ingredients – Between 3

1 x 300g small whole rainbow trout, cleaned and scaled – personal hygiene
– food safety, e.g. the food danger zone, cross-

3. Combine lemon myrtle and oil in a small bowl and brush all
over the fish.
4. If using paperbark, dampen before placing fish on top. If using
baking paper, place fish on paper. Place the lemon slices on top
of the trout.
5. Trim the edges of the bark with scissors then wrap in a bon-bon
shape, allowing a little opening for steam to escape, using
cooking string to tie each end of the bark. If using baking paper,
encase fish in paper to form a bag “en papillote”.
6. Place the trout parcel on an oven tray and sprinkle with water.
If using paperbark, cover with foil.
7. Bake fish for 20 minutes, or until fish is cooked.
8. To prepare warrigal greens; separate leaves and blanch for 1-2 minutes, then refresh under cold water.
9. Serve fish on top of warrigal greens.
