Subject: Menu item photos/ Menu Cards

Policy

It is the policy of Hyatt City of Dreams Manila that all menu items should be documented and
photographed

Purpose

The purpose of the policy is to ensure the quality and consistency of all food items in coming
out from the kitchen. From the flavor profile of the item, service size and presentation

Procedure

All menu items should be documented. All the recipes and sub recipes should be
documented. All photographs of menu items should also be placed along with the menu
cards. The copy of the recipe book will be placed inside the kitchen and in the chef’s office.

A brief description of the dishes should also be made by the kitchen. The information can be
used by the front of the house and the phone operators
