Subject: Cleaning Responsibilities in the Kitchen

Policy

The Chef de Cuisine is responsible to keep his kitchen always clean and well maintained in
line with the hygiene rules and regulation of the City of Dreams and Hyatt International.

The Chef de Cuisine will take appropriate action and contact the persons concerned if the
cleanliness is not satisfactory

Purpose

To delegate and assign all cleaning responsibilities to the kitchen, stewarding and any
outside contractor. This policy will ensure that there are no unclear areas of responsibility

Procedure

The cleaning responsibilities of the kitchen will be divided as follow:

1. Floors, grease traps, drainage, walls and ceilings.

1.1 The stewarding will clean the walls and ceiling as necessary.

1.2 The stewards will wash the floor in the night as per schedule.
The Stewarding Manager and Chef de Cuisine will supervise the quality of work done by the
staff and inform the Executive Chef if the quality drops below standard.

1.3 The drainage and grease traps will be cleaned by the outside contractor as per
schedule.

2. Cleaning of walk in refrigerator floor, wall, ceiling and shelving is the sole
responsibility of the cooks.

3. Trolleys will be delivered by the cooks to a washing area and cleaned by stewards in
charge of the area. It is the responsibility of the Chef de Cuisine to make sure that all trolleys
in the kitchen are always clean.

4. The cleaning of all working tables, drawers and shelving is responsibility of the
cooks.

5. Cleaning the seal/rubber gasket of the fridge twice a day.

6. A steward assigned to every kitchen does the washing of the pots and pans.

7. All cooking ranges, convection ovens, steam kettles, grills, deep fryers etc. are the
responsibility of the Stewarding department and cleaned during lean time, nighttime or as
scheduled.

8. The stewarding department will clean all salamanders as per schedule.

9. All exhaust hoods will be cleaned by the outside contractor on a regular basis as per
schedule.

10. The Stewarding Manager is responsible that all garbage bins in operation are always
properly washed and disinfected before returning to the kitchens. Dollies for the garbage
bins must be washed as required.

Others:

This policy may be reviewed or amended at any time for operational reasons.
