Practice calculations involving Iodine number

1. Define IODINE NUMBER (also known as iodine index).

TYPE 1 QUESTIONS: determine the Iodine number from the formula.

2. Linoelic acid (Mr = 281 gmol-1) has a formula of

CH3(CH2)4CH=CHCH2CH=CH(CH2)7COOH.

a. Draw its structural formula.

b. Determine how many moles of double bonds 1 mol of the fatty acid
has.

c. Calculate the number of moles of Iodine (I2) that reacts with 1 mol of
the fatty acid.

d. Determine the mass of iodine that reacts with 1 mol of the fatty acid.

e. Determine the mass of iodine that reacts with 100g of the fatty acid.

f. State (from part (e)) the iodine number for this fatty acid.

3. A different fatty acid known as X is isolated, and it is found to have a similar

molecular mass to that of linoleic acid, but a lower iodine number.

a. What can you deduce about its structure?

b. State and explain which fatty acid, linoleic acid or X, would have the
higher melting point.

c. Rancidity in fats can occur as a result of two separate processes.

Name these processes and describe how they differ in the site of
reactivity and the conditions that favour the reaction.

4. Using table 34 in your DataBooklet, determine the iodine number for

palmitic acid (assume the Mr = 256.48 gmol-1).

TYPE 2 QUESTIONS: calculate the number of double bonds.

5. A 5.0 g sample of vegetable oil has reacted completely with 38 mL of a 0.50

mol dm-3 iodine solution. What is the iodine number of the oil?

a. Calculate the number of moles of iodine reacted.

b. Calculate the mass of iodine that reacted (in g).

c. Calculate the iodine number using the formula:

Mass of I 2reacted , g
x 100
Mass of oil , g

d. Now calculate the mass of iodine 1 mol of the oil would react with
using the equation:
Iodine number
x Molar mass of oil
100

e. Now calculate the number of mol of iodine this would be.

f. If each mol of iodine reacts with one mol of double bonds, how many
double bonds does the oil have per triglyceride molecule?

g. Why might this value be considered misleading?

6. A sample of fat containing 0.02 mol of fatty acid was found to react with
10.16 g of iodine. Determine the number of carbon-carbon double bonds
present in the fatty acid.
